Dijon Chicken Smothered in Mushrooms

Ingredients

4 boneless skinless chicken breasts (about 1 lb)
1/4 cup Gold Medal® all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive or canola oil
1/2 cup roasted garlic-seasoned chicken broth (from 14-oz can)
1 jar (4.5 oz) Green Giant® sliced mushrooms, drained
1 1/2 tablespoons Dijon mustard
Chopped fresh thyme, if desired

Directions

 1 Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat or rolling pin until about 1/4 inch thick. In shallow pan, stir together flour, salt and pepper.

2 In 12-inch nonstick skillet, heat oil over medium-high heat. Coat both sides of chicken with flour mixture. Cook chicken in hot oil 6 to 8 minutes, turning once, until chicken is no longer pink in center. Remove chicken to serving plate; cover to keep warm.

3 Stir broth into skillet. Heat to boiling over medium-high heat. Stir in mushrooms and mustard. Cook 2 to 3 minutes, stirring frequently, until slightly thickened. Spoon sauce over chicken. Sprinkle with thyme

Chicken Breast with Tarragon

Ingredients:


4 boneless, skinless chicken breast halves (about 2 pounds)
1 tablespoon unsalted butter
1 tablespoon canola oil
½ cup heavy cream
1 tablespoon Dijon mustard
¾ teaspoon dried tarragon
⅛ teaspoon salt
⅛ teaspoon pepper

Directions:

1. Sprinkle chicken with salt and pepper. In a large skillet over medium heat, melt butter with oil. Brown chicken breasts on both sides. Reduce heat and cook, covered, 15 minutes, just until chicken is cooked through.

2. Transfer chicken to a serving platter; tent with foil to keep warm. Add cream to skillet; scraping up brown bits.

3. Stir in mustard and tarragon. Cook over medium heat, stirring constantly, 5 minutes until sauce thickens slightly.

4. Season to taste with salt and freshly ground black pepper.

5. Pour sauce over chicken. Serve immediately.

What's for Dinner?

Do you hate asking that question night after night? Or, maybe you are the one asking? Do you get the same response? "Oh, What ever you decide is fine" (grin)
Ug!

Well tonight, how about a little salad? Salad? yes, we can make this fun...

grab some of your favorite greens.
some sliced tomato
a grilled chicken breast
a little green pepper
crumble a little bacon

and voila! dinner.

now for the dressing...
apple cider vinegar
the smooth Dijon mustard
some olive oil
and salt and pepper.

a great light dinner... feel free to add anything else you like. For instance, beans, and avocado for a southwestern touch.

or how about olives and feta cheese for more of a Mediterranean meal?

That is the beauty of a green salad. It can be what ever you want.
