Caramel Apple Upside down cake

This cake is sweet and moist. My version is gluten free and dairy free.  

Ingredients

Topping

1/4 cup  margarine
2/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1 14oz can of fried apples

Cake

1 1/3 cups gluten free baking mix
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup granulated sugar
1/2 cup vegetable oil
2 eggs
 1/2 teaspoon vanilla
1/4 cup almond milk 

Whipped Cream

1 cup coconut cream
2 tablespoons powdered sugar
Steps

1 Heat oven to 325°F. Spray bottom and sides of 8- or 9-inch square pan with cooking spray.

2 In 1-quart saucepan, melt 1/4 cup margarine  over medium heat, stirring occasionally. Stir in brown sugar. Heat to boiling; remove from heat. Stir in 1/2 teaspoon cinnamon. Pour into pan; spread evenly. Arrange apple wedges over brown sugar mixture, overlapping tightly.

3 In medium bowl, mix flour, baking powder, 1/2 teaspoon cinnamon and the salt; set aside. In large bowl, beat 1 cup granulated sugar and 1/2 cup vegetable oil with electric mixer on medium speed, scraping bowl occasionally, until fluffy. Beat in eggs, one at a time, until smooth. Add vanilla. Gradually beat in flour mixture alternately with almond milk, beating after each addition until smooth. Spread batter over apple wedges in brown sugar mixture.

4 Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool on cooling rack 15 minutes. Meanwhile, in medium bowl, beat coconut cream on high speed until it begins to thicken. Gradually add 2 tablespoons powdered sugar, beating until soft peaks form.


5 Run knife around sides of pan to loosen cake. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan. Serve warm cake with whipped cream. Store cake loosely covered.

Apple Pecan Cake


This comes under the title what to do with a bag of apples, when you know you can't eat them all. I started by coring the apples and dicing them up. Then put them in a large stock pot with 1/4 cup sugar and a tablespoon on cinnamon, added just a little water and simmered them for 2 hours. 

I put them in a container and refrigerated overnight. Cooked apples can be used in many ways, but this is about cake. 
 
Cake:
1 box yellow cake mix
Eggs, oil water 
1/2 can cream cheese frosting
1 1/2 cups cooked apples.
1 tablespoons cinnamon
1 cup chopped pecans

Frosting:
3 cups powdered sugar
1/2 cup butter
1/4 cup milk
3 tablespoons sour cream
1 teaspoon vanilla extract


Cake directions

Make the cake batter following the instructions on the back of the box. Add the cinnamon, apples, and pecans. Pour the batter into two greases 9 inch cakes pans. Bake according to package direction. Use the higher end of the time range. 

A toothpick should test cleanly when they are done, and should be a nice golden brown. Let them cool before turning out on a cake plate. Use the 1/2 can of cream cheese frosting for the first layer. Make sure in is spread evenly, then carefully put the other layer on top. Pour the frosting over the cake, spread until smooth. Let the frosting set up before cutting and serving. 

Frosting directions:
Bring the butter to room temperature. Add the sugar, milk and vanilla, and sour cream all at once. Beat until smooth.

Cherry Pops

Follow up to apple dumplings: Well I didn't have any apples or mountain dew, but I did have cola and cherries, so I came up with this. So far test results are very favorable.


Ingredients

1 can cherries
5 oz cola
1 can crescent rolls
3 oz chocolate frosting, melted
1/4 tsp salt
1/4 cup powdered sugar
4 tbl milk
3 tbl brown sugar

Directions

Pour the cherries into a strainer over a bowl. Pour the cola over the cherries. Let drain. Pour the cherries into the cola syrup mixture. Let sit for 5 minutes.

Open the can of rolls, sprinkle with a little of the powdered sugar. Brush one side of each with the chocolate. Add 3 or 4 cherries. Fold over, and pinch the seams together to close.

Place them into a greased cake pan. When they are all arranged, sprinkle the brown sugar and the rest of the cherries, and then pour ½ cup of the cola cherry syrup over them.

Bake at 375 for 30 minutes.

Make a light icing with powdered sugar and a little milk. Drizzle over the top.


Tip: Try putting the crescent roll dough in a dish over a bowl of ice to keep the dough really cold. As the dough warms it gets sticky and soft. Therefore making harder to work with.

A recipe from Betty Crocker - Apple Crisp

Ingredients



1 tablespoon water
1 teaspoon almond extract
6 cups sliced unpeeled tart eating apples (6 medium)
2 tablespoons Gold Medal® all-purpose flour
2 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons firm butter or margarine
1/2 cup coarsely crushed zwieback crackers
2 tablespoons chopped pecans
Yogurt Topping
1/2 cup plain fat-free yogurt
1 teaspoon granulated sugar
1/8 teaspoon almond extract

Directions

Heat oven to 375°F. Spray 1 1/2-quart casserole with cooking spray. In small bowl, mix water and 1 teaspoon almond extract. In casserole, toss with apples.
In small bowl, mix flour, brown sugar and cinnamon. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. Stir in crackers and pecans. Sprinkle over apples.
Bake uncovered about 30 minutes or until topping is golden brown and apples are tender.
In small bowl, mix topping ingredients until well blended. Serve warm apple crisp with topping.

Apple Cheddar Pie

For the dough:

 

Ingredients:

2 1/2 cups all-purpose flour
2 tsp. salt
1 Tbs. sugar
6 oz. white cheddar cheese, finely grated
16 Tbs. (2 sticks) cold unsalted butter, cut
 into 1/2-inch pieces
1/3 to 1/2 cup ice water

For the filling:

2 lb. Braeburn apples, peeled, cored and cut
 into slices 1/4 inch thick
1 1/2 lb. Granny Smith apples, peeled, cored
 and cut into slices 1/4 inch thick
3/4 cup sugar
1 Tbs. fresh orange juice
3/4 tsp. ground cinnamon
1/4 tsp. freshly grated nutmeg
1/4 tsp. salt
1 Tbs. unsalted butter
3 Tbs. cornstarch
2 Tbs. heavy cream

Directions:


To make the dough, in a bowl, combine the flour, salt, sugar and cheese, breaking apart any large clumps of cheese. Put the butter in a separate bowl. Place both bowls in the freezer for 10 minutes.

In a food processor, pulse the flour mixture until the ingredients are combined, about 5 pulses. Add the butter and process until the mixture resembles coarse meal, 15 to 20 pulses. Add 1/3 cup of the ice water and pulse twice. The dough should hold together when squeezed with your fingers but should not be sticky. If it is crumbly, add more water 1 Tbs. at a time, pulsing twice after each addition. Turn the dough out onto a work surface, divide in half and shape each half into a disk. Wrap the disks separately in plastic wrap and refrigerate for 1 hour.

To make the filling, in a large bowl, combine the apples, sugar, lemon juice, cinnamon, nutmeg and salt and stir to combine. Let stand at room temperature for 30 minutes to 1 hour.

Meanwhile, remove 1 of the dough disks from the refrigerator and let stand for 5 minutes. Place the dough between 2 sheets of lightly floured waxed paper and roll out into a 12-inch round about 3/16 inch thick. Brush off the excess flour. Transfer to a pie dish and press the dough into the dish. Trim the edges, leaving a 1/2-inch overhang. Cover with plastic wrap and refrigerate for 30 minutes.

Preheat an oven to 400°F.

Pour the apples into a sieve set over a small saucepan, then transfer the apples to a large bowl. Set the saucepan with the juices over medium-high heat, add the butter and cook until reduced to 1/3 cup, 3 to 5 minutes. Remove from the heat. Sprinkle the cornstarch over the apples and toss to combine, then stir in the reduced juices. Transfer the apples to the pie shell.

Roll out the remaining dough disk into a 12-inch round about 3/16 inch thick. Drape the dough over the apples and press gently to eliminate any air pockets. Trim the dough flush with the rim of the dish. Fold the bottom crust over the top crust and crimp to form a decorative edge. Cut 4 slits in the top of the crust to allow steam to escape. Brush the top of the crust with the cream.

Bake for 20 minutes. Cover the edges and top with aluminum foil if they begin to get too dark. Reduce the oven temperature to 350°F and continue to bake until the apples are easily pierced with a knife, 65 to 70 minutes more. Transfer to a wire rack and let cool for at least 1 1/2 hours before serving. Serves 8 to 12.

A recipe from Betty Crocker - Slow Cooker German Red Cabbage and Pork Ribs

Slow Cooker German Red Cabbage and Pork Ribs

German red cabbage provides a colorful addition to this hearty bacon, pork ribs and Granny smith apples recipe that's slow-cooked for dinner.

Ingredients

4 slices bacon, chopped
6 boneless pork country-style ribs (2 lb)
1 1/2 teaspoons salt
1/2 teaspoon pepper
6 cups thinly sliced red cabbage (about 1/2 head)
2 Granny Smith apples, peeled, thinly sliced (3 cups)
1 medium onion, finely chopped (1/2 cup)
1/2 cup cider vinegar
1/4 cup apple juice
2 tablespoons sugar

Directions

In 12-inch skillet, cook bacon over medium-high heat, stirring occasionally, until crisp. Remove bacon from skillet to large bowl; reserve drippings in skillet. Sprinkle both sides of ribs with salt and pepper; cook in drippings until browned. Meanwhile, stir cabbage, apples and onion into bacon in bowl.

Spray 4- to 5-quart slow cooker with cooking spray. Place ribs in cooker, reserving drippings in skillet. Spoon cabbage mixture over ribs.

Stir vinegar, apple juice and sugar into drippings in skillet; heat to boiling. Pour over ribs and cabbage mixture.

Cover; cook on Low heat setting 5 to 6 hours. To serve, use slotted spoon to remove cabbage mixture and ribs from cooker.

Fresh Apple Cake with Caramel Frosting

Ingredients:


1 1/2 cups vegetable oil
2 cups sugar
2 large eggs
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons vanilla
2 1/2 cups flour
1 cup chopped pecans
3 cups finely chopped raw apples (or grated)


Frosting:

1/2 cup butter (4 ounces)
1 cup brown sugar
3 to 5 tablespoons milk
1 box confectioners' sugar (1 pound), about 4 cups

Preparation:

Measure vegetable oil into large mixing bowl. Add sugar and eggs. Beat on low speed until creamy. Sift flour and measure. Sift again and add salt, soda and baking powder. Add a small amount of the flour mixture at a time to the creamed mixture. Beat well after each addition. When all flour has been added, or when batter becomes very stiff, remove electric mixer. Fold in chopped pecans and chopped apples with a wooden spoon. Spread evenly into a 9"x13" pan (or 2 - 9" pans) lined with lightly greased wax paper. Bake in 350° oven for 45 to 55 minutes. Let cool in pan for 5 minutes. Carefully loosen edges and turn onto cake rack, remove wax paper, cool and frost.

Make Frosting: Cook butter and sugar together until well blended and sugar is dissolved. Add 3 tablespoons milk and 1 box of confectioners' sugar. Beat and add just enough milk to spread.

Easy Fruit Salad

Ingredients


1/4 cup freshly squeezed orange juice
1/4 cup coconut milk
1/2 pineapple, peeled, cored, and cut into 1-inch pieces
1 orange  peeled, seeded, and cut into 1-inch pieces
2 apples, peeled and sliced (dipped in lemon water)
1/2 pound grapes, picked off stems cut in half.
1 large banana peeled and slices. (dip in lemon water)
1 pint any seasonal berries

Directions

In a small bowl, whisk together the lime juice and milk.
In another small bowl squeeze 1/2 a lemon and mix in 1 cup of water.
Place the banana slices and the apple pieces in the lemon water. This will keep them from turning brown too quickly.
 Place cut up fruit in a large salad bowl, pour orange juice mixture over fruit. Taste and adjust seasonings with more lime or sugar as needed. Refrigerate 1 hour.

Ginger Apple Peach Crisp

No, the original recipe does not call for peaches, but ginger and peaches sound good, and smell good when cooking together.
this can also be combines to cook in a 9x13 pan.

ingredients

Filling
4 medium Granny Smith apples (about 1 1/2 pounds), peeled, cored, chopped into 1/2-inch cubes
1/2 cup dried sweetened cranberries
1 cup slice peaches
1/2 cup sugar
3 tablespoons minced crystallized ginger
1 tablespoon all purpose flour

Topping
1/3 cup (packed) dark brown sugar
1/4 cup all purpose flour
1/4 cup old-fashioned oats
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground cloves
1/4 cup (1/2 stick) chilled unsalted butter, cut into 1/2-inch cubes
2/3 cup toasted pecans, coarsely chopped

Apple Cheddar Popovers

I'm alway looking for new things, and twists on favorite things. This morning I found this:
Ingredients:


.cooking spray
1 tart apple, such as Granny Smith or Fuji, peeled, cored, and chopped
1/3 cup shredded sharp cheddar cheese
2 large eggs
1 cup flour
¼ teaspoon salt
1 cup 1% milk
1 tablespoon margarine, melted

Directions

1.Preheat oven to 450°F. Lightly coat 8 popover cups with cooking spray. (If you don't have a popover pan, you can use a muffin tin.)

2.Place 1 tablespoon each of the apple and cheese at the bottom of each popover cup.

3.In a food processor or blender, combine eggs, flour, and salt. Process until well blended. (If you don't have a food processor or a blender, you can use a handmixer.)

4.With the machine running, add milk and margarine through the feed tube (if using a food processor—otherwise, add these a little bit at a time to the blender or bowl). Process until smooth.

5.Fill the cups two-thirds full with the batter.

6.Bake for 15 minutes, reduce oven temperature to 350°F, and continue to bake for another 20 minutes until popovers are puffed and golden brown.

7.Let cool at least 15 minutes, then remove from pan.

Apple & Bacon Pork Chops

Once upon a time, (don't you just love that?), back in California days,... there was this little restaurant. They were the upscale restaurant in this small town. We loved to go in for special occasions. Any way, as a daily special they created a baked pork chop with a apple bacon chutney served on a bed of garlic mashed potatoes. Turned into my favorite thing to order, when I could go.

This is my version. i omitted the raisins for a more savory flavor.
Ingredients

6 1″ thick pork chops
2 Tbsp lard
2 medium baking apples (Gala and York are our favorites), peeled, cored and diced
10 strips of bacon, diced
1 red onion, diced
2 cloves garlic, minces
4 fresh sage leaves, finely chopped
1/4 tsp paprika
1 Tbsp lemon juice
1 Tbsp salt
1/2 tsp pepper


Instructions


1. In a medium pan (we recommend a cast iron skillet or dutch oven), melt lard over medium-high heat

2. Cook apples, bacon and onion until onion is softened and bacon is crispy, about 8 minutes

3. Add garlic, sage, paprika and lemon juice and toss for 2 minutes

4. .Remove from heat, transfer to bowl and set-aside

5. Salt and pepper each side of pork chop,

6. Place  pork chops into the hot pan to sear on each side, cook each side of the chops for 5 minutes in hot pan over medium-high heat

7. Transfer pan/dutch oven to 350 degree oven and bake uncovered for 25 minutes, spoon the apple/bacon mixture over the chops and continue baking for 10 minutes or until hot and pork juices are clear.

Roast Turkey



This is easy. Don't be afraid of the bird. 

Preheat the oven to 325 degrees F. 
Pull the neck and giblets out of the cavity; ditch the liver and save the rest of the neck and giblets for gravy. 
Dry the turkey with paper towels, then season inside and out with salt and pepper. Fill the turkey with aromatics like chopped onions, celery,  carrots, apples and herbs, then place breast-side up in a roasting pan and brush with melted butter. Tent with foil and roast for 2 hours (for a 10- to 12-pound turkey; add an extra 15 minutes per pound for larger birds). 
Remove the foil, baste with more melted butter and crank the oven to 425 degrees F. Roast for another hour or until the meat at the thigh registers 165 degrees F. Let rest while you make the gravy.
