GF Orange Almond Muffins


1 cup gluten free rice flour
1 cup Betty Crocker gluten free  flour
2/3 cup almond flour/meal
R tablespoons  potato starch or cornstarch
1/2 cup light brown sugar
2 teaspoons baking powder
1 teaspoon xanthan gum
3/4 teaspoon fine sea salt
1/2 cup maple syrup
1 medium orange
2 teaspoons vanilla extract
1 teaspoon nutmeg
1/2 teaspoon ground clove
1/2 cup unseetened almond milk
2 teaspoons distilled vinegar
1/2 cup chopped almonds
Directions
Preheat the oven to 350 degrees F
Line 12 muffin cups with muffin liners.
In a spice mill or coffee grinder add almonds. Ground until almost fine. Pour into a large mixing  bowl. Keep doing this until there 2/3 cup. 
Add the rest of the dry ingredients including the brown sugar and mix well.
Next cut the orange in small pieces and add to the bowl.
Add almond milk, maple syrup. Mix well.  The batter will be thick.
Add a dollop to each muffin cup.
Bake at 350 until done.
Add a sprinkling of chopped nuts to each muffin and bake 3 to 4 more minutes, or unwilling the nuts are slightly roasted.

Creamy Peach Coffee Cake

2 cups peaches
3 tablespoons craisins
1/4 cup milk
1/4 cup sugar
2 tablespoons corn starch

1 1/2 cup flour
3/4 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking sodas
2 tablespoons ground flax seed 
1 teaspoon cinnamon 
1/4 cup butter
Pinch of salt

1 egg
1/2 cup butter milk
1 teaspoon vanilla

2 tablespoons butter
1/4 cup brown sugar
1/4 cup flour

1/3 cup butterscotch chips

In a sauce pan add the peaches and milk bring to a boil over medium heat. Next add the sugar and the craisins. Simmer for 5 minted. Then turn off the heat. 

In a large bowl add the flour, sugar, baking soda and baking powder. Cut the butter into small cubes. Use a fork or pastry cutter to work the butter into the flour. It should resemble course crumbs. Add a pinch of salt. 

Beat the egg and buttermilk together. Add all at once to the flour. Add the flax and the cinnamon. Mix well.

In a small bowl. Add 1/4 flour, 1/4 cup brown sugar and  butter. Use a knife or pastry cutter to work the butter in. It should look like peas when complete.  

Grease a 8x8 dish. Add the batter speed to the edges. Add the peaches.

Add the streusel to the top. 

Bake for 30 to 40 minutes at 350.

Granola Bars


2 1/2 cups (230 grams) old fashioned rolled oats
1/2 cup (80 grams) whole nuts, coarsely chopped
1/3 cup (113 grams) honey
1/4 cup (56 grams) unsalted butter, cut into pieces
1/4 cup (50 grams) packed light brown sugar
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
1/2 cup (60 grams) dried fruit, coarsely chopped
1/4 cup plus 2 tablespoons (67 grams) white chocolate chips
2 bananas 

Method
Prepare Oven and Pan
Heat oven to 350 degrees F. Line bottom and sides of a 8-inch or 9- square pan with aluminum foil. Then lightly oil or spray with cooking spray.

Combine ingredients in a large bowl. Mix well. 

Press the mixture into pan make sure it is tightly packed and even in one layer. 

Bake 30 minutes until they it has lightly toasted. 

Remove from the oven and let cool before cutting into bars. Then refrigerate to set.

Reese's Peanut Butter Cup Cookies

1 cup butter
3/4 cups brown sugar
3/4 cup sugar
1 teaspoon vanilla
2 eggs
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
12 oz Reese's peanut butter cups chopped fine
1 cup chopped pecans

Preheat the oven to 375.
Cream sugar and butter together until smooth with an eclectic mixer. Then add the vanilla and the eggs one at a time. blend 3 to 5 minutes. The batter should be smooth. Next and the salt, soda and 1/2 cup of the flour. Start the the mixer on low. Add the rest of the flour a little at a time--about 1/2 a cup. Mix for 3 to 5 minutes. Make sure the batter is smooth and soft. Stir in the peanut butter cups and the nuts. Mix with a rubber spatula until well mixed.

Spray the cookie sheets with cooking spray, then scoop out a teaspoon of the mixture, drop onto the cookie sheet. On a large cookie sheet put no more than 12. Space them about 1 1/2 to 2 inches apart.

Cook each pan for 10 minutes. let the pan cool for a few minutes then transfer to a cooling rack. Continue baking.

Enjoy with a nice cold glass of milk.

Pumpkin Bread Pudding

I'm not usually a fan of pumpkin, and well the cuermogeon is allergic, but tis the season. I may try this out at the next pot luck of food at at work.

Lets face it  the Thanksgiving dessert is always pecan pie.


Ingredients

Bread Pudding:
1 loaf French bread, torn in pieces
1 quart 40 percent whipping cream
1 dozen eggs
1 vanilla bean, seeds scraped
2 ounces vanilla extract
4 ounces pumpkin pie spice
2 cups granulated sugar
2 cups brown sugar
2 cups canned pumpkin



Rum Sauce:

4 tablespoons cornstarch
1/2 cup water
1 quart whipping cream
2 cups granulated sugar
1 stick butter
1 cup dark rum

Directions

Preheat the oven to 350 degrees F.

For the bread pudding: Blend all the ingredients together, except the French bread, until mixed well. Place the French bread in a 1-gallon aluminum pan. Pour the mixture over the French bread and let sit for 30 minutes. Bake for 1 hour or until firm.

For the rum sauce: Blend the cornstarch with the water. Mix all the ingredients together and cook over low heat until thick.

Serve the sauce with the bread pudding.

Cherry Pops

Follow up to apple dumplings: Well I didn't have any apples or mountain dew, but I did have cola and cherries, so I came up with this. So far test results are very favorable.


Ingredients

1 can cherries
5 oz cola
1 can crescent rolls
3 oz chocolate frosting, melted
1/4 tsp salt
1/4 cup powdered sugar
4 tbl milk
3 tbl brown sugar

Directions

Pour the cherries into a strainer over a bowl. Pour the cola over the cherries. Let drain. Pour the cherries into the cola syrup mixture. Let sit for 5 minutes.

Open the can of rolls, sprinkle with a little of the powdered sugar. Brush one side of each with the chocolate. Add 3 or 4 cherries. Fold over, and pinch the seams together to close.

Place them into a greased cake pan. When they are all arranged, sprinkle the brown sugar and the rest of the cherries, and then pour ½ cup of the cola cherry syrup over them.

Bake at 375 for 30 minutes.

Make a light icing with powdered sugar and a little milk. Drizzle over the top.


Tip: Try putting the crescent roll dough in a dish over a bowl of ice to keep the dough really cold. As the dough warms it gets sticky and soft. Therefore making harder to work with.

Butterscotch Pudding

Well the curmudgeon broke a tooth this weekend. He needed something smooth this evening. So we made soup and pudding. I found a really good recipe for butterscotch. Enjoy.

Ingredients

  • 1 cup dark brown sugar
  • 3/8 cup cornstarch
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1/4 cup butter

Directions

  1. In a 1 quart saucepan, stir together sugar, cornstarch and salt. Place over medium-low heat and stir in eggs and milk. Cook, stirring, until mixture thickens enough to coat the back of a metal spoon. Stir in vanilla and butter. Let cool briefly and serve warm, or chill in refrigerator until serving.

Ina Garten's Carrot Cup Cakes

Ingredients
2 cups sugar
1 1/3 cups vegetable oil
1 teaspoon pure vanilla extract
3 extra-large eggs
2 cups all-purpose flour
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 1/2 teaspoons kosher salt
3 cups grated carrots (less than 1 pound)
1 cup raisins
1 cup chopped walnuts
For the frosting:
3/4 pound cream cheese, at room temperature
1/2 pound unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1 pound confectioners' sugar
Directions
Preheat the oven to 350 degrees F.

Beat the sugar, oil, and vanilla together in the bowl of an electric mixer fitted with a paddle attachment. Add the eggs, 1 at a time. In another bowl, sift together the flour, cinnamon, baking soda, and salt. With the mixer on low speed, add 1/2 of the dry ingredients to the wet ingredients. Add the grated carrots, raisins, and walnuts to the remaining flour, mix well, and add to the batter. Mix until just combined.

Line muffin pans with paper liners. Scoop the batter into 22 muffin cups until each is 3/4 full. Bake at 400 degrees F for 10 minutes then reduce oven temperature to 350 degrees F and cook for a further 35 minutes, until a toothpick comes out clean. Cool on a rack.

For the frosting, cream the cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with a paddle attachment. Add the sugar and beat until smooth.

When the cupcakes are cool, frost them generously and serve

A recipe from Betty Crocker - Apple Crisp

Ingredients



1 tablespoon water
1 teaspoon almond extract
6 cups sliced unpeeled tart eating apples (6 medium)
2 tablespoons Gold Medal® all-purpose flour
2 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons firm butter or margarine
1/2 cup coarsely crushed zwieback crackers
2 tablespoons chopped pecans
Yogurt Topping
1/2 cup plain fat-free yogurt
1 teaspoon granulated sugar
1/8 teaspoon almond extract

Directions

Heat oven to 375°F. Spray 1 1/2-quart casserole with cooking spray. In small bowl, mix water and 1 teaspoon almond extract. In casserole, toss with apples.
In small bowl, mix flour, brown sugar and cinnamon. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until crumbly. Stir in crackers and pecans. Sprinkle over apples.
Bake uncovered about 30 minutes or until topping is golden brown and apples are tender.
In small bowl, mix topping ingredients until well blended. Serve warm apple crisp with topping.

Little meat loaves




Ingredients

  • egg
  • 3/4 cup milk
  • 1 cup shredded Cheddar cheese
  • 1/2 cup quick cooking oats
  • 1 teaspoon salt
  • 1 pound ground beef
  • 2/3 cup ketchup
  • 1/4 cup packed brown sugar
  • 1 1/2 teaspoons prepared mustard

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the egg, milk, cheese, oats and salt. Add the ground beef, mixing well, and form this mixture into eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.
  3. In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
  4. Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes.

S'mores Cookies

These cookies have a graham cracker base with a chocolate chip cookie sprinkled with chocolate and marshmallows topping it. The crunch of the graham cracker with the gooey cookie is the perfect combination.

Ingredients:

11 tablespoons unsalted butter softened
1 cup brown sugar packed
0.5 cup granulated sugar
2 eggs large
1 teaspoon vanilla extract
1 teaspoon baking soda
0.5 teaspoon sea salt
1 teaspoon cinnamon
2.5 cups flour
0.5 cup chocolate chips semi sweet
1 cup mini marshmallows
4 Hershey bars broken into pieces
2 packages graham crackers broken into squares

Preparation:
Preheat the oven to 375 degrees. Line baking pans with parchment paper. I used one 11x17 pan and one 9x13 pan but you can really use any sized pans you want.

Lay out graham crackers side by side on the pans as close as possible (they should be touching). I used 16 graham cracker squares on one pan and 10 squares on another. You may have to add or remove graham crackers according to how much dough you have. If you want your cookies thicker you will use more dough and less graham crackers.
In a medium bowl, whisk together the flour, baking soda, sea salt and cinnamon to combine. Set aside.

In the bowl of an electric mixer, cream butter with white and brown sugar until light and fluffy. Add the eggs and vanilla and mix until combined.

Add the flour mixture to the butter mixer and combine on low speed.

Fold in the chocolate chips and marshmallows. Chill dough in refrigerator for 1 hour to overnight (I did one batch right away and another after chilling overnight and found there was no difference.)

Place tablespoons of dough on graham crackers about 1 – 1 ½ inches apart. I averaged about 1 1/2 tablespoons of dough per graham cracker square as seen in the picture above. Press down slightly with fingertips.

Bake for 5 minutes then remove from oven to press Hershey's bar pieces on to the top. You can place as many pieces or as little as you want depending how much chocolate flavor you want.

Bake for 5 – 7 more minutes or until dough is beginning to turn golden brown at the edges. Remove to a wire rack to cool. For clean cutting make sure cookies are completely cool and cut with a sharp knife.

Hummingbird Cake

This sounds so good., and it looks so pretty.  We are just going to try it. if there is such a thing as healthy cake... hm.... it's got lots of fruit. This comes from Midwestliving.com.
Makes: 12 to 16 servings
Prep: 50 mins
Cool: 10 mins
Bake: 35 mins at 350°F


Ingredients:
1 1/2 cups sugar
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 8 ounce can crushed pineapple (juice pack), drained
1/2 cup cooking oil
4 eggs, lightly beaten
1 teaspoon vanilla
1 cup chopped bananas
1 cup chunky-style applesauce
2/3 cup toasted, chopped walnuts
Cream Cheese Frosting (recipe follows)
1 1/2 cups toasted, chopped pecans
2 tablespoons toasted, finely chopped pecans (optional)



Directions

1. Grease and lightly flour two 9x1-1/2-inch round cake pans; set aside.

2. In a large mixing bowl, combine the sugar, flour, baking soda, salt and cinnamon. Add drained pineapple, oil, eggs and vanilla. Beat with an electric mixer till combined, scraping the sides of the bowl occasionally. Stir in bananas, applesauce and walnuts. Divide batter between prepared pans.

3. Bake in a 350 degree F oven about 35 minutes or until top springs back when lightly touched. Cool cake layers on wire racks for 10 minutes. Remove from pans; cool thoroughly on wire racks.

4. Prepare the Cream Cheese Frosting; frost cake. Lightly press the 1-1/2 cups pecans into sides of cake. If you like, sprinkle the 2 tablespoons finely chopped pecans on top of cake. Cover and store in the refrigerator. Makes 12 to 16 servings.

Cream Cheese Frosting

Ingredients

1 8 ounce package cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla
5 cups sifted powdered sugar

Directions

In a large mixing bowl, beat cream cheese, butter and vanilla with electric mixer till light and fluffy. Gradually add powdered sugar, beating until smooth and of spreading consistency. Makes about 3-1/2 cups.

Peanut Butter Cookies

Ingredients

1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter, room temperature
1/2 cup peanut butter
1 egg
1 1/4 cup flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Method

1 Beat the butter until creamy, 2 minutes. Add the sugars, beat for 2 more minutes. Mix in the peanut butter and egg. Mix together the dry ingredients - flour, baking soda, baking powder and salt. Stir the dry ingredients into the sugar butter mixture.

2 Wrap dough in plastic and refrigerate at least 3 hours

3 Preheat oven to 375°F. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.




For chewier cookies, bake at 300°F for 15 minutes.



Yield: Makes about 2 dozen cookies

Snack Cake

If you are feeling a little snack? This is easy and good. Sometimes nothing is bette than a warm piece of cake and cold glass of milk. This cake might even be good to take to a pot luck or party.

cup all-purpose flour

cup packed brown sugar

tablespoons unsweetened baking cocoa
1/2
teaspoon baking soda
1/4
teaspoon salt
1/2
cup water

tablespoons canola oil
1/2
teaspoon white vinegar
1/4
teaspoon vanilla
1/4
cup semisweet chocolate chips
Powdered sugar, if desired
  • Heat oven to 350°F. In ungreased 9x5-inch loaf pan, mix flour, brown sugar, cocoa, baking soda and salt with fork. Stir in remaining ingredients except chocolate chips and powdered sugar. Sprinkle chocolate chips over batter.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 30 minutes. Sprinkle with powdered sugar.

Fresh Apple Cake with Caramel Frosting

Ingredients:


1 1/2 cups vegetable oil
2 cups sugar
2 large eggs
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons vanilla
2 1/2 cups flour
1 cup chopped pecans
3 cups finely chopped raw apples (or grated)


Frosting:

1/2 cup butter (4 ounces)
1 cup brown sugar
3 to 5 tablespoons milk
1 box confectioners' sugar (1 pound), about 4 cups

Preparation:

Measure vegetable oil into large mixing bowl. Add sugar and eggs. Beat on low speed until creamy. Sift flour and measure. Sift again and add salt, soda and baking powder. Add a small amount of the flour mixture at a time to the creamed mixture. Beat well after each addition. When all flour has been added, or when batter becomes very stiff, remove electric mixer. Fold in chopped pecans and chopped apples with a wooden spoon. Spread evenly into a 9"x13" pan (or 2 - 9" pans) lined with lightly greased wax paper. Bake in 350° oven for 45 to 55 minutes. Let cool in pan for 5 minutes. Carefully loosen edges and turn onto cake rack, remove wax paper, cool and frost.

Make Frosting: Cook butter and sugar together until well blended and sugar is dissolved. Add 3 tablespoons milk and 1 box of confectioners' sugar. Beat and add just enough milk to spread.

Ginger Apple Peach Crisp

No, the original recipe does not call for peaches, but ginger and peaches sound good, and smell good when cooking together.
this can also be combines to cook in a 9x13 pan.

ingredients

Filling
4 medium Granny Smith apples (about 1 1/2 pounds), peeled, cored, chopped into 1/2-inch cubes
1/2 cup dried sweetened cranberries
1 cup slice peaches
1/2 cup sugar
3 tablespoons minced crystallized ginger
1 tablespoon all purpose flour

Topping
1/3 cup (packed) dark brown sugar
1/4 cup all purpose flour
1/4 cup old-fashioned oats
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground cloves
1/4 cup (1/2 stick) chilled unsalted butter, cut into 1/2-inch cubes
2/3 cup toasted pecans, coarsely chopped

LEMON POPPY SEED MUFFINS

LEMON POPPY SEED MUFFINS




1/2 c. butter
1 c. white sugar
2 eggs
1/2 c. milk
1/4 c. poppy seeds
1 1/2 c. flour
1 tsp. flour
1 tsp. baking powder
1/2 tsp. salt
1 grated lemon rind
1 tsp. almond extract

Directions

In large bowl mix flour, baking powder, salt and lemon rind. Pour milk into bowl. Cream butter, sugar, and 1 egg and the almond extract. Beat in second egg. Blend in milk. Pour flour mixture over batter. Add poppy seeds. Stir only to moisten. Fill greased muffin tins 3/4 full. Bake at 375 degrees for 30 to 35 minutes.

Chocolate Pie with Coconut

Ingredients

2 cups milk
1/4 cup butter or margarine, softened
3 oz unsweetened baking chocolate
1 cup coconut
3/4 cup sugar
1/2 cup Original Bisquick® mix
1 1/2 teaspoons vanilla
3 eggs, slightly beaten
1 cup frozen (thawed) whipped topping


Directions
Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. In 3-quart saucepan, heat milk, butter and chocolate over medium heat 5 to 7 minutes, stirring frequently, just until chocolate is melted; remove from heat.
In medium bowl, stir chocolate mixture and remaining ingredients except whipped topping with wire whisk or fork until smooth. Pour into pie plate.
Bake 40 to 45 minutes or knife inserted in center comes out clean. Cool 30 minutes. Refrigerate at least 2 hours or until chilled. Garnish with whipped topping. Store in refrigerator.

Mardi Gras Cupcakes

For the Cupcakes:



2 1/4 cups cake flour
1 cup + 2 tablespoons whole milk, at room temperature
6 large egg whites (3/4 cup), at room temperature
2 teaspoons almond extract
1 teaspoons vanilla extract
1 1/2 cups + 2 tablespoons granulated sugar
4 teaspoons baking powder
1 teaspoons table salt
12 tablespoons unsalted butter, softened but still cool
purple, green, and yellow food coloring
purple, green, and yellow sanding sugars

For the Buttercream Frosting:

20 tablespoons (2½ sticks) unsalted butter, softened
2½ cups Confectioners’ sugar
1/8 teaspoon table salt
2 teaspoons vanilla extract
2 tablespoons heavy cream

Directions:

Preheat oven to 350 degrees. Line muffin pan with paper liners.

In a 2-cup glass measure, combine milk, egg whites, and extracts and mix with fork until blended.

In the bowl of a stand mixer fitted with the paddle attachment, on low speed combine cake flour, sugar, baking powder, and salt. Add butter and continue beating at slow speed until mixture resembles moist crumbs, with no powdery streaks remaining.

Add all but 1/2 cup of milk mixture to crumbs and beat at medium speed for 1½ minutes. Add remaining 1/2 cup of milk mixture and beat 30 seconds more. Stop mixer and scrape sides of bowl. Return mixer to medium speed and beat 20 seconds longer.

Pour a scant cup of the cake mix into three separate mixing bowls. Mix in food colorings and place the colored batter into three individual Ziploc bags.

Squeeze cake batter into each cupcake well, alternating colors. (I did purple first, followed by green…)


Then yellow on top.


Bake 15 to 17 minutes or until toothpick inserted in the center comes out clean. Transfer muffin pan to wire racks to cool completely before removing cupcakes. Cool completely prior to frosting.


To make buttercream frosting, in standing mixer fitted with whisk attachment, beat butter at medium-high speed until smooth, about 20 seconds. Add confectioners’ sugar and salt; beat at medium-low speed until most of the sugar is moistened, about 45 seconds. Scrape down bowl and beat at medium speed until mixture is fully combined, about 15 seconds; scrape bowl, add vanilla and heavy cream, and beat at medium speed until incorporated, about 10 seconds, then increase speed to medium-high and beat until light and fluffy, about 4 minutes, scraping down bowl once or twice.


Place frosting into a large decorators decorating bag fitted with the 1M decorating tip and approximately 1/4″ above cupcake top at a 90° angle to cupcake surface, pipe a spiral of icing, beginning at the outer edge and working inward. Sprinkle with sanding sugars.

Chocolate Coconut Pie




INGREDIENTS


1 Pillsbury® refrigerated pie crust, softened as directed on box
1 can (12 oz) coconut milk
1 cup granulated sugar
1 cup milk
1/3 cup cornstarch
1 cup water1
 bag (12 oz) semisweet chocolate chips
1 1/2 cups whipping cream
1/4 cup powdered sugar
1/4 cup chocolate shavings.

DIRECTIONS

1 Heat oven to 450°F. Bake pie crust as directed on box for One-Crust Baked Shell, using 9-inch glass pie plate. Cool completely on cooling rack, about 15 minutes.
 
2 In 2-quart saucepan, heat coconut milk, granulated sugar and milk to boiling over medium heat, stirring constantly. In small bowl, mix cornstarch and water. Reduce heat to medium-low; stir in cornstarch mixture until thickened.
 
3 In large microwavable bowl, microwave chocolate chips uncovered on Medium (50%) about 2 minutes or until melted. Stir half (about 2 cups) of the coconut milk mixture (haupia) into the melted chocolate. Spread in baked shell. Gently spread white haupia on top of chocolate layer. Refrigerate pie 2 hours.
 
4 In chilled medium bowl, beat whipping cream and powdered sugar with electric mixer on medium speed until soft peaks form. Spread whipped cream over pie; sprinkle with chocolate shavings. Cover and refrigerate any remaining pie.
