Baked Macaroni and Beef

1 pound ground beef browned.
1 package mac and cheese make to package directions
1 can peas drained
4 Roma tomatoes chopped
1 can mushrooms
1 can cream of celery soup
1 tsp Italian seasoning
1 tsp onion powder
1 tsp garlic salt
 1/2 cup chopped onion and bell pepper mixed
salt and pepper
1 cup bread crumbs
1/2 cup mozzarella cheese


Brown the ground beef breaking it up and crumbling while it's cooking add the in the seasons. Next add the drained peas the mushrooms with the can juices and the tomatoes. Simmer for another 5 minutes.

Pour into a casserole dish top with the mac and cheese then the mozzarella cheese and the bread crumbs

Bake at 375 until the top is golden brown.

Hamburger Whoopy

When I was nine or ten I wrote down my first recipe in Gram's cookbook. I called it Hamburger Whoopy. It was very simple. I browned hamburger, added cream of mushroom soup, a little milk, mixed it together, and served it over mashed potatoes.

My other Granny used to make Beef Stroganoff, and pour it over potatoes and noodles. So this was my young version.

Today it's a little more sophisticated, adding onion and garlic, steak. Sauce and Worcestershire sauce.
1 Lb ground beef
1/2 med onion
1 4 oz can of sliced mushrooms
1 Tbl garlic powder
1 Tbl steak sauce
1 Tbl Worcestershire
1 Tbl vinegar
1 can cream of mushroom soup
1/2 cup light sour cream

Brown the ground beef. Add salt and pepper, garlic powder, steak sauce, soup, mushrooms - including the juice, and Worcestershire. Let simmer while the noodles boil.

Fill a 2 quart sauce pan about 2/3 full of water, and bring to a boil. Add salt and 3 cups of noodles. I like rotini or egg noodles. Cook 8 minutes.

When the noodles are cooked, drain the water. Add the sour cream to the meat and mushrooms. Fold in well.
Serve over the hot noodles. Enjoy.

Mexican Biscuit Casserole/Midwest Living


This looked so good when i saw it. Of course i had to add a twist with the tomatoes and green chilies.

ingredients

  • 1 1/2 pounds lean ground beef
  • 1 1/4 - ounce package taco-seasoning mix
  • 1 can diced tomatoes with green chilies
  • 1/4 cup water
  • 16 - ounce can kidney beans
  • 11 - ounce can whole-kernel corn with sweet peppers, drained
  • 3 1/4 cups packaged biscuit mix
  • cup milk
  • cups shredded cheddar cheese (12 ounces)

directions

  1. In a large skillet, cook ground beef until brown. Drain off fat.
  2. Add taco-seasoning mix according to package directions, except use the 3/4 cup water. Add the undrained kidney beans and the drained corn; bring to boiling.
  3. Meanwhile, combine the biscuit mix and milk. Stir until all is moistened. Beat for 30 seconds more.
  4. Roll dough out on a lightly floured surface to 1/2-inch thickness. Cut with a 2-inch round biscuit cutter, making 10 biscuits.
  5. Spoon hot meat mixture into a 13x9x2-inch (3-quart rectangular) baking dish and top with some of the cheese.
  6. Immediately place biscuits on top and bake in a 350 degree F oven for 20 minutes or until biscuits are done. Sprinkle with remaining cheese. Let stand for 5 minutes. Makes 8 to 10 servings.

beef goulash

Ingredients

  • 1 lb ground beef
  • 1 large onion, chopped fine
  • 1 package frozen corn
  • 1 clove garlic, chopped
  • 1 can diced tomatoes
  • 1 can (15 oz) tomato soup
  • 1 Tbsp Worcestershire sauce
  • 1 tsp salt (or more to taste)
  • 3 Tbls paprika
  • 2 Tbls mustard
  • pepper to taste
  • 2 cups egg noodles

Preparation

  1. Brown ground beef.
  2. Add onion and corn. Cook over medium heat until soft (10-15 min).
  3. Add paprika, tomatoes, tomato soup, Worcestershire sauce, salt and pepper to the beef mixture. Reduce heat and simmer 20 minutes.
  4. While the beef mixture cooks, boil the egg noodles dente, drain.
  5. Add the egg noodles to the beef mixture, stir well, and simmer another 20 minutes, covered.

Sloppy Joe's


Ingredients

1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 1/4 pounds ground beef
1/4 cup brown sugar
2 teaspoons to 1 tablespoon steak seasoning
1 medium onion, chopped
1 small red bell pepper, chopped
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
2 cups tomato sauce
2 tablespoons tomato paste
4 crusty rolls, split, toasted, and lightly buttered

Directions

Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops.

Cottage Pie

This is really easy, and only takes about 30 minutes. This is similar to the beef stew and biscuits I remember as a kid.

Ingredients
1 lb ground beef
1 package gravy mix
1 pkg frozen mixed veggies
1 medium fresh tomato diced
1/4 tsp garlic salt
1 tsp steak seasoning
1 can of biscuits like Grands
1 cup water
2 tbs olive oil

Directions
Brown the ground beef in a large skillet over medium heat. Add the frozen veggies and the diced tomato. Simmer for 5 minutes to take the chill off the veggies. stir in the gravy mix and a cup of water. simmer for another few minutes stirring well so there are no lumps and veggies sure mixed well.





Pour mixture into a 8x8 baking dish.
Top with the biscuits. Brush a little olive oil on the top of the biscuits.
This will give them a nice golden brown on top.
Bake covered with foil at 350 degrees for 15 minutes or according to the biscuit package.
Cover uncovered for another 5 to 10 so the tops will be browned. 

Serve hot

Little meat loaves




Ingredients

  • egg
  • 3/4 cup milk
  • 1 cup shredded Cheddar cheese
  • 1/2 cup quick cooking oats
  • 1 teaspoon salt
  • 1 pound ground beef
  • 2/3 cup ketchup
  • 1/4 cup packed brown sugar
  • 1 1/2 teaspoons prepared mustard

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the egg, milk, cheese, oats and salt. Add the ground beef, mixing well, and form this mixture into eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.
  3. In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.
  4. Bake, uncovered, at 350 degrees F (175 degrees C) for 45 minutes.

Baked Nachoes





1 1/2 lbs ground beef
1 onion
1 can of refried beans (homemade are best)
taco seasoning
large bag of tortilla chips (Juanita's Brand)
can of nacho cheese
1 c. shredded cheese (Jack, Cheddar or Pepper Jack)
toppings: lettuce, tomato, sour cream, olives, green onion, jalepenos, salsa

Brown the beef with the diced onions, season lightly with salt and pepper. Drain meat and add refried beans and taco seasoning; cook down. Add nacho cheese and mix well.Fill an extra large bowl with your favorite tortilla chips and pour meat mixture over the chips. Stir until mixed well and then put in a baking pan and sprinkle with shredded cheese.
Bake at 350°F until heated through and cheese has melted.
Suggested Toppings: Lettuce tomato, sour cream, olives, green onion, jalapenos, salsa.
NOTE: You can add corn, black, pinto, or even kidney beans to the mix if you like (or leave out any ingredients you don't like.)

Pillsbury Cheeseburger Pizza

INGREDIENTS


1 can (11 oz) Pillsbury® refrigerated thin pizza crust
1 lb lean (at least 80%) ground beef
1/2 cup thinly sliced onion
1/8 teaspoon pepper
1/3 cup pickle relish (not sweet)
3/4 cup ketchup
1 tablespoon yellow mustard
4 slices crisply cooked hickory smoked bacon, chopped
1 1/2 cups shredded American cheese (6 oz)
1 cup shredded lettuce
1/2 cup chopped tomato.

DIRECTIONS

1 Heat oven to 400°F. Spray or grease 15x10-inch or larger dark or nonstick cookie sheet. Unroll dough on cookie sheet; starting at center, press dough into 15x10-inch rectangle. 2 In 10-inch nonstick skillet, cook beef, onion and pepper over medium-high heat, stirring frequently, until cooked thoroughly; drain. Stir in relish, ketchup and mustard. Spoon evenly over dough. Sprinkle with bacon and cheese. 3 Bake 14 to 19 minutes or until crust is golden brown and cheese is melted. Top with lettuce and tomato. Easy Mac and Cheese

Ingredients:

1 box of Mac and Cheese, made according to package
1 pound ground beef
1 can peas
1 can diced tomatoes
3 Tbls. Sour Cream
3 Tbls Parmesan cheese
salt
pepper
garlic powder.

Directions:

Brown ground beef, breaking it up as it cooks, add salt, pepper, and garlic powder. Prepare the mac and cheese according to package directions.
Add to the tomatoes and peas to the ground beef. Be sure to drain the peas first. turn heat to simmer. You don't want the tomatoes or peas to turn to mush.
Gently fold in the mac and cheese to the hamburger mixture.
Top with sour cream and Parmesan, and serve.

1 1/4 pound(s) uncooked lean ground beef, (93% lean/7% fat)

2 large egg(s)

1/4 cup(s) grated Parmesan cheese

1/4 cup(s) seasoned bread crumbs, Italian style

1/4 cup(s) parsley, finely chopped

3/4 tsp kosher salt

1/8 tsp black pepper, freshly ground, or to taste

1 1/2 cup(s) store-bought marinara sauce, divided



PASTA

1/4 tsp kosher salt

8 oz uncooked whole-wheat pasta, penne



ZUCCHINI

1 tsp olive oil, extra virgin

2 clove(s) (medium) garlic clove(s), thinly sliced

2 small uncooked zucchini, chopped (about 3 cups)

1/2 tsp kosher salt, or to taste



GARNISH

1 Tbsp grated Parmesan cheese



Instructions

Preheat oven to 400°F. Line a rimmed baking sheet with aluminum foil and coat with cooking spray.





In a large bowl, combine beef, eggs, cheese, bread crumbs, parsley, salt and pepper until well-combined (do not over mix). Divide beef mixture into 6 even portions and form into mini loaves; place on prepared baking sheet. Spoon 3 tablespoons marinara sauce over each loaf and bake until cooked through, about 35 to 40 minutes; allow to rest for 10 minutes before serving.





Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package directions. Once pasta is cooked, reserve 1/4 cup of pasta cooking liquid and then drain pasta.





While pasta and meatloaves cook, heat oil in a large nonstick skillet over medium-low heat. Add garlic; cook, stirring occasionally, until lightly browned, about 2 to 3 minutes. Once garlic begins to brown, add zucchini; increase heat to medium-high and cook zucchini, stirring occasionally, until lightly browned and soft, about 6 to 7 minutes. Season to taste with salt and then add pasta and reserved cooking liquid to pan; stir to combine and cook for 1 minute to heat through.





Heat remaining marinara sauce; spoon 1 tablespoon sauce over each meatloaf before serving. Yields 1 meatloaf, about 1 cup pasta-zucchini mixture and 1/2 teaspoon cheese garnish per serving.

Sweedish Meatballs

Ingredients


1 tablespoon olive oil
1 onion, chopped
1 large celery stalk, chopped
2 garlic cloves, minced
3 teaspoons kosher salt
1 teaspoon ground allspice
3/4 teaspoon ground nutmeg
2 eggs
1/2 cup milk
1 cup dry bread crumbs
2 pounds meat-loaf mix (1 pound lean ground beef, 1/2 pound ground pork, 1/2 pound ground veal or lamb)

Directions

1.Heat oven to 350° F. In a medium skillet, over medium heat, heat the oil with the onion, celery, and garlic and cook until the vegetables are tender but not browned, about 10 minutes. Add the salt, allspice, and nutmeg. Remove from heat. In a large bowl, whisk the eggs, then blend in the milk and bread crumbs. Add the meat and cooked vegetables and stir or work with your hands to combine.

2.Shape into 1-inch balls. Sauté over medium-high heat, in 1 tablespoon olive oil, a few meatballs at a time, removing them when well browned on all sides.

3.Pour off all but 2 tablespoons of the fat. Whisk in 1/4 cup all-purpose flour, 1 teaspoon salt, 1 teaspoon sugar, and a few grinds of black pepper. Cook over medium heat, scraping up any browned bits. Whisk in 1 3/4 cups light cream and 1 cup water. Bring to a boil, stirring constantly, until the sauce thickens, at least 1 minute.

4.Return the meatballs to the skillet and simmer over low heat for 20 minutes.

Atkins Burgers with Blue Cheese

Another delish recipe from Atkins.


Ingredients:


Portobello Burgers with Blue Cheese Sauce:
2 cloves garlic, minced
1 tablespoon sherry or red wine vinegar
1 tablespoon tamari
½ teaspoon granular sugar substitute (optional)
½ teaspoon salt
¼ teaspoon teaspoon freshly ground black pepper
3 tablespoons virgin olive oil
4 large portobello mushroom caps, wiped clean
¾ cup cup crumbled blue cheese
¼ cup mayonnaise
2 tablespoons heavy cream
1 teaspoon Worcestershire sauce
1 cup loosely packed arugula or watercress
4 ¼-inch-thick tomato slices
4 slices red onion (optional)

Atkins Hamburger Buns:

¼ cup heavy cream
½ cup warm water
2 teaspoons active dry yeast
1 large egg
1 ½ tablespoon canola oil
1 tablespoon granular sugar substitute
½ teaspoon salt
¾ cup whole-wheat flour
1 ¼ cup Atkins Cuisine All Purpose Baking Mix

Directions:

1.Heat grill to medium-high.

2.Meanwhile, combine garlic, vinegar, tamari, sugar substitute (if using), salt and pepper in a bowl. Slowly whisk in the oil; brush over the mushrooms and let stand 20 minutes. Remove the mushrooms from the bowl and discard the marinade.

3.Set the mushrooms on the grill rack and grill until tender, 4 to 6 minutes per side.

4.Meanwhile, combine blue cheese, mayonnaise, cream and Worcestershire sauce in a bowl; mix well, mashing chunks of cheese with the back of a spoon or fork.

5.To assemble, place half a bun on each of 4 plates; top with ¼ cup arugula, a mushroom cap, a tomato slice and an optional onion slice. Spoon 2 tablespoons of the blue cheese sauce over each and top with the other half of the bun. Serve warm or at room temperature. (If serving without the bun, place the mushroom on the arugula, and top with the tomato slice and sauce.)


Atkins Hamburger Buns

1.Heat the cream and water in a small saucepan to 115°F. Add the yeast and allow to proof for 5 minutes or until it foams.

2.Add the yeast and milk mixture to the bowl of an electric mixer. Add the egg, oil, sugar substitute and salt. Mix thoroughly.

3.Add the whole-wheat flour and mix on the slowest setting for 10 seconds.

4.Add the baking mix and combine until the mixture comes together as a wet dough, about 10 seconds. Do not overbeat.

5.Form the dough into a ball and place into a lightly oiled bowl. Cover with plastic wrap and allow to double in size, 30–40 minutes.

6.Punch down the dough and separate into 6 equal portions. Form each portion into a disk on a sheet pan, cover with plastic wrap and allow to double in size, 20–30 minutes.

7.Bake in a preheated 400°F oven for 13–15 minutes until golden brown.

Serve immediately or keep in an airtight container for up to 3 days.

The Atkikns Meat-zza

This is one of the old recipes. from a a quick and easy recipe book. There are a few modifications, but it is good and very filling.

3/4 Pound of Fresh Ground Meat (Beef, Turkey or Sausage)
1 Cup of Shredded Mozzarella
2 tablespoons Parmesan cheese grated.
1/4 cup medium salsa
1 Tiny Red Onion, chopped
1 6 oz Can of Sliced Mushrooms
1 Tsp of Season Salt
1 glove garlic finely minced
1 tsp oregano
1 tsp ground fennel.

Mix the egg, season salt, fennel garlic oregano and meat in a bowl (The egg is to aid hold the meat together as soon as cooked, not a necessity but handy) Pat the meat into the 9 round baking Dish The meat must be spread evenly on the bottom of the dish, about 1/2 thick Location the dish into the oven at 450 degrees for 10 minutes Eliminate and drain grease.


Soon after the meat is accomplished you can empty the baking dish by turning it upside down over the cookie sheet for a crispier crust Or you can can leave it in the baking dish

add the cheese, the salsa, and sprinkle the onion and mushrooms over the top, put back in the oven just long enough to melt the cheese and heat the veggies.

The origanal recipe severed two, but I always found it could really feed 4.

Easy Beef Enchiladas

Tomorrow is pot luck in the office, this is going to my contribution.

Ingredients:


1 pound lean ground beef
1 1/2 cups diced onion
1 1/2 cups (about 2 medium) finely diced bell pepper
12 corn tortillas, heated or fried in oil to soften
2 1/2 cups enchilada sauce, canned or homemade
3 cups cheddar- jack shredded cheese
Serve as desired with: shredded lettuce, avocado, cilantro, sour cream


Directions:

1. Preheat oven to 350 degrees F. Spray a 9x13-inch pan with nonstick spray.

2. Heat oil in a large skillet. Add ground beef; break apart with a spoon or spatula to crumble the meat. Saute the meat on medium heat until browned (about 5 minutes). Tilt the pan and spoon the fat out of the pan; discard. Remove cooked meat to a bowl.

3. Return pan to medium heat and add onion and bell pepper. Saute until just softened, 3 to 4 minutes. Remove the vegetables from the pan and add to the meat mixture; set aside.

4. Add 1/2 cup of sauce to the prepared pan. Spread it around so it coats the entire bottom of the pan.

5. Assemble the enchiladas: Place tortilla on a work surface. Spoon 1/4 to 1/3 cup of the meat mixture down the middle. Sprinkle 2 Tablespoons of cheese on top of the meat. Drizzle 1 Tablespoon of sauce on top. Wrap the tortilla around the filling tightly and place it seam-side-down in the pan. Repeat with remaining tortillas and filling until you have finished filling 12 tortillas. Place the tortillas side-by-side in the pan- it's okay if they are all snuggled in there tightly.

6. Pour remaining enchilada sauce over the top of the stuffed enchiladas. Cover the dish with foil and bake for 30 minutes.

7. Remove pan from the oven and take off the foil. Sprinkle remaining cheese on top; return to the oven and let the cheese melt (about 5 minutes).
