Cobb salad



                                                                  


The Cobb salad is a main-dish American garden salad made from chopped salad greens (iceberg lettuce, watercress, endives, and Romaine lettuce), tomato, crisp bacon, boiled or roasted (not fried) chicken breast, hard-boiled egg, avocado, chives, Roquefort cheese, and red-wine vinaigrette. -- wikepdia.com

...As to who invented it. varies depending on who tells it, but it was invented at the the then famous Brown Derby restaurant in LA. It was named for the owner Robert Cobb who own the Derby in the 30's.

Anyway the salad is delish, and one of my all time favorites.  The is the Weight Watchers version.


Ingredients

3/4 cup(s) canned cranberry sauce, whole-berry
3 Tbsp red wine vinegar
1/4 tsp Dijon mustard
1/4 tsp black pepper
1 Tbsp fresh thyme, chopped
1 Tbsp olive oil
5 cup(s) romaine lettuce, coursely chopped
3 cup(s) Iceberg lettuce, coursely chopped
8 oz cooked turkey breast with skin, smoked, chopped
1 cup(s) low-fat shredded Cheddar cheese, white
1 cup(s) frozen corn kernels, thawed
1 cup(s) sweet red pepper(s), diced
1/2 cup(s) uncooked celery, chopped
1/2 cup(s) (sliced) uncooked red onion(s), diced

Instructions

Combine first 6 ingredients in a small bowl. Whisk until well blended. Cover, and set aside.

Combine romaine lettuce and iceberg lettuce in a large bowl. Place 2 cups lettuce mixture in each of 4 large salad bowls. Arrange 2 ounces chopped turkey, 1⁄4 cup cheese, 1⁄4 cup corn, 1⁄4 cup red bell pepper, 2 tablespoons celery and 2 tablespoons onion over each. Serve vinaigrette with salad. Yield: 4 servings (serving size: 1 salad and about 1⁄3 cup dressing).

Beware of a Curmudgeon with a Sharp Knife

Sometimes it is nice to come home from the J.O.B to have dinner made. This morning I asked my curmudgeon to make us some salads for dinner. (We try to have salad for supper at least once a week.)


He looked up from the computer and said “What?!” teasing of course. Hm I said "A curmudgeon with a sharp knife…ooo"  He grumbled, and then asked. “How long do I bake the lettuce?”

Actually he makes a really good chopped salad.

other veggies on hand, from leftovers. ...  nothing is ever measured. but it's always great.

A Healthy Taco Salad.




Ingredients


2 tablespoons extra-virgin olive oil
1 large onion, chopped
1 1/2 cups fresh corn kernels (see Tip) or frozen, thawed
4 large tomatoes
1 1/2 cups cooked long-grain brown rice (see Tip)
1 15-ounce can black, kidney or pinto beans, rinsed
1 tablespoon chili powder
1 1/2 teaspoons dried oregano, divided
1/4 teaspoon salt
1/2 cup chopped fresh cilantro
1/3 cup prepared salsa
2 cups shredded iceberg or romaine lettuce
1 cup shredded pepper Jack cheese
2 1/2 cups coarsely crumbled tortilla chips
Lime wedges for garnish


Preparation

1.Heat oil in a large nonstick skillet over medium heat. Add onion and corn; cook, stirring, until the onion begins to brown, about 5 minutes. Coarsely chop 1 tomato. Add it to the pan along with rice, beans, chili powder, 1 teaspoon oregano and 1/4 teaspoon salt. Cook, stirring frequently, until the tomato cooks down, about 5 minutes. Let cool slightly.

2.Coarsely chop the remaining 3 tomatoes. Combine with cilantro, salsa and the remaining 1/2 teaspoon oregano in a medium bowl.

3.Toss lettuce in a large bowl with the bean mixture, half the fresh salsa and 2/3 cup cheese. Serve sprinkled with tortilla chips and the remaining cheese, passing lime wedges and the remaining fresh salsa at the table.

Pillsbury Cheeseburger Pizza

INGREDIENTS


1 can (11 oz) Pillsbury® refrigerated thin pizza crust
1 lb lean (at least 80%) ground beef
1/2 cup thinly sliced onion
1/8 teaspoon pepper
1/3 cup pickle relish (not sweet)
3/4 cup ketchup
1 tablespoon yellow mustard
4 slices crisply cooked hickory smoked bacon, chopped
1 1/2 cups shredded American cheese (6 oz)
1 cup shredded lettuce
1/2 cup chopped tomato.

DIRECTIONS

1 Heat oven to 400°F. Spray or grease 15x10-inch or larger dark or nonstick cookie sheet. Unroll dough on cookie sheet; starting at center, press dough into 15x10-inch rectangle. 2 In 10-inch nonstick skillet, cook beef, onion and pepper over medium-high heat, stirring frequently, until cooked thoroughly; drain. Stir in relish, ketchup and mustard. Spoon evenly over dough. Sprinkle with bacon and cheese. 3 Bake 14 to 19 minutes or until crust is golden brown and cheese is melted. Top with lettuce and tomato. Chicken Salad with Green Apples



Serves 4

Ingredients

4 6-ounce boneless, skinless chicken breasts
kosher salt and black pepper
1/4 cup fresh lime juice (from 2 to 3 limes)
1 tablespoon white wine or rice vinegar
2 tablespoons light brown sugar
4 scallions (white and light green parts), thinly sliced
2 Granny Smith apples (peeled, if desired), diced
1/3 cup roasted peanuts, roughly chopped
2 tablespoons thinly sliced fresh mint
1/2 cup thinly sliced fresh basil

Directions

Pat the chicken dry with paper towels. Pound it to an even thinness.

Place the chicken in a large saucepan and add water to cover by ½ inch. Add 3 teaspoons salt and ½ teaspoon pepper and bring to a gentle simmer.

Cook until no trace of pink remains, 8 to 10 minutes. Transfer to a bowl of ice water for 5 minutes.

Meanwhile, in a large bowl, combine the lime juice, vinegar, and sugar, stirring until the sugar dissolves. Add the scallions and apples and toss.

Drain, pat dry, and dice the chicken. Add it to the apple mixture with the peanuts, mint, basil, 1 teaspoon salt, and ½ teaspoon pepper.

Toss and divide among individual plates.

Asian Steak Salad With Mango


Serves 4

Asian steak salad with mango
Ingredients


3/4 pound sirloin steak (1 inch thick)
kosher salt and black pepper
1 teaspoon grated lime zest
3 tablespoons fresh lime juice
1 tablespoon honey
1 tablespoon chopped pickled ginger (found in the international aisle of the market)
2 teaspoons low-sodium soy sauce
3 tablespoons canola oil
1 large head romaine lettuce, cut into strips (about 7 cups)
1 mango, cut into thin strips
1 red bell pepper, thinly sliced
1/2 cup fresh basil leaves, sliced
2 scallions, thinly sliced
1 teaspoon toasted sesame seeds

Directions

Heat a large skillet over high heat. Season the steak with ¼ teaspoon each salt and black pepper. Cook 4 to 5 minutes per side for medium-rare. Let rest at least 5 minutes before slicing.

Meanwhile, in a large bowl, whisk together the lime zest and juice, honey, ginger, soy sauce, oil, and ¼ teaspoon salt. Add the lettuce, mango, bell pepper, basil, and scallions and toss to combine. Gently fold in the steak and sprinkle with the sesame seeds.

Beef and Blue Salads


Today let's talk about salad. It is another of those quick meal ideas. i love salads, but i can never make enough of them.

For a Beef and Blue salad you just need a few ingredients and you have a delicious meal in a bowl For a twist use sandwich steaks. Some of you may know the joys of a Philly cheese steak. They use a very thin cut of meat the cooks quickly and can then be torn apart like the lettuce.

For one salad:
2 "Steak-Um" slices
1 Roma tomato
1 oz blue or Gorgonzola cheese
1 thin slice of red onion with its rings separated,
1/4 celery
a sprinkle of toasted pine nuts
2 cups romaine lettuce

cook the meat. it just takes a minute each. salt and pepper to taste. Set them aside to cool. slice the onion, and dice the tomato. slice the celery

tear the lettuce leaves to bite sized pieces. add all the ingredients. top with the nuts and serve with your favorite dressing. I like buttermilk ranch with this salad.

Now who said you can't have your steak and eat it too?
