Delicious Spicy Cucumber Salad For 2

 Ingredients:

 

  • 1 large cucumber, cut into small chunks
    • 4 green onions, thinly sliced
    • ½ red chilli, deseeded and thinly sliced
    • Juice of lime
    • 2 tbsp of soy sauce
    • 1 tbsp water
    • ½ tsp sugar

 

Instructions:
 
Place cucumber chunks, onions and chilli into a bowl. Add the lime juice, soy sauce and sugar. Combine and chill for a few hours.

 

This makes a great side salad with any BBQ meat.

Chicken Apple Salad

New stuff:
Try this great salad next time .

Makes one salad:

1 small apple
3 oz of grilled chicken
4 cups of mixed greens
1/2 cup celery, diced
1/2 cup cucumber, diced
1/2 cup bell pepper, diced
1/3 cup chopped pecans
1/3 cup shreddded cheese (optional)

put the greens in a large bowl, top with favorite dressing.

Gyros for Heros.

Believe it or not we found a Gyro kit in the grocery store. It comes with pita bread, meat and Tzatziki sauce. Cool huh? Well the meat was seasoned nicely and there is nothing bad about a warm piece of pita bread. But the sauce, not the best. Next time I would make my own. So …
Here is a good recipe for tdziki sauce the next time we want gyros, and by the way the Greeks say “ero” like the G is silent.

Tzatziki Sauce Ingredients

• 2 (8 ounce) containers plain yogurt
• 2 cucumbers - peeled, seeded and diced
• 2 tablespoons olive oil
• 1/2 lemon, juiced
• salt and pepper to taste
• 1 tablespoon chopped fresh dill
• 3 cloves garlic, peeled

Directions

In a food processor or blender, combine yogurt, cucumber, olive oil, lemon juice, salt, pepper, dill and garlic. Process until well-combined. Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor.
To make the sandwich, take a warm pita, top with thin strips of beef, top with cooled sauce and shredded lettuce, grilled onion and tomatoes.

Gazpacho

While it's still hot out there, here is another wonderful dish that won't heat up the house.

Ingredients:


1 slice bread, crust removed and torn into pieces
2 cups vegetable juice
1¼ pounds ripe tomatoes, half roughly chopped, half in ¼-inch dice
1⅓ cups cucumber, peeled and seeded, half roughly chopped, half in ¼-inch dice (1 1/3 cups)
1 medium onion, half roughly chopped, half in ¼-inch dice
½ large red bell pepper, half roughly chopped, half in ¼-inch dice
¼ cup extra-virgin olive oil
1½ tablespoons white balsamic vinegar
1½ tablespoons freshly squeezed lime juice
1 teaspoon chopped garlic
1 jalapeno, seeded and minced

Directions:

1. In a small bowl, soak bread with tomato juice until softened, about 5 minutes.

2. Place bread and juice in blender with the roughly chopped vegetables, olive oil, vinegar, lime juice, garlic and jalapeno. Blend until very smooth, about 3 minutes. Transfer to a large bowl and stir in remaining vegetables.

3. Season to taste with salt and pepper and chill for 1½ hours before serving.

Fun Summer Drinks

Well, most of us are melting right now. The summer heat is hear. That doesn't mean we still can't be creative and fun. So here are some sweet, fruity, creamy drinks to keep you cool and energized.

Kimberly's Cucumber Surprise:

1 cucumber, peeled
1 stalk of celery, 
1/4 green bell pepper
1 T chopped onion
1 small carrot, peeled
2 cups of ice

chop the vegetables and place in a blender with the ice.  if it gets too thick, add just a splash of vegetable broth.

Pour into a tall glass and enjoy.




Key Lime Swing  

1/2 cup key lime juice
1 cup vanilla yogurt
1/4 c milk
1 T sugar
2 cups ice cubes
3 T whipped cream
limes slices dredged in sugar

put juice, yogurt sugar  and milk in the blender add the ice and blend until smooth. pour into glasses, top with whipped cream and a sugared lime slice



Chocolate Cherry Blast  

1 Cup of Black Coffee
1 Cup chocolate ice cream
1/2 cup frozen cherries
2 T cherry juice
2 T milk
whipped cream
fresh cherries

Put coffee ice cream , milk and frozen cherries in the blender, blend until smooth. Top with whipped cream and cherries.

Good Morning from the Resaurant

I just wanted to share a little about my life, and my cooking experience.
I was in my Grandma's kitchen from the age of 2, and helping my mom cook from about the age of 8.

there was always something to help with. at gram's, I had my own table and apron. My mom was teaching about food safety at 6.

I was making "Bubble Gum casseroles" at 10. What is a Bubble Gum Casserole? Ground meat, cheese, rice or potatoes, and veggies, don't forget seasoning. At that time, I think it was seasoning salt.

I think Chili and Spaghetti may have started out that way.

I worked in many fast-food types growing up. When I got to California 18 years ago I hung up my apron for administrative work for the resort.

But now I am in the restaurant, and having fun. It's so different to work at job, and be in charge of the operation.

Skip ahead.. About a month ago, I started working as a cashier in a resort/retreat restaurant. We serve breakfast and dinner. there is always something new.
We use organic and local produce and eggs.
So I'm going to be sharing with you as much as I can with out giving away too much. I have to keep the confidence of the resort, restaurant and my fellow staff, but we will still have fun.

Every morning we serve a fruit salad. This is my favorite combo.

1 pint of strawberries
1/2 watermelon
1 cantaloupe
2 oranges
2 mangoes
1 pineapple
1 cucumber
1 bunch of red grapes

peal and chop all fruits to bite sized. Come in, order this with some granola, and yogurt, and you have a the perfect light breakfast on a hot day.

Cucumber? yes not only does it provide some green into all that red fruity flesh, but on supper hot days, cucumber is cooling. that is why you see it a lot in Mediterranean cooking.
