Red Beans and Rice



In the summer, I hardly ever use my oven. If I can't cook it in a crock pot of micro wave, I don't cook it. 


Crock-Pot red beans and rice


    • 6 can red beans
    • 6 green onions, chopped
    • 2 stalks of celery, chopped
    • ½ green pepper, chopped
    • 1 to 2 cups ham scraps
    • 1 teaspoon garlic powder
    • 1 teaspoon cayenne pepper
    • 1 tablespoon seaming salt



Add all ingredients to a crock-pot and cook on low for 6 to 8 hours. Serve over white rice.

Best Chicken Soup





Ingredients:


    • 1 green pepper, chopped
    • 1 red pepper, chopped
    • 1 cup carrots, chopped
    • 2 cups onion, chopped
    • 2 cups celery, chopped
    • 4 medium potatoes, cubed
    • 2 tsp garlic, minced
    • 8 oz chicken stock
    • 1 cup white wine
    • 1 cup water
    • 2 (28oz) cans chopped tomatoes
    • ½ tsp basil
    • ½ tsp oregano
    • ½ tsp pepper
    • Salt
    • 2 tbsp olive oil
    • 3 tbsp fresh parsley
    • 2 lb fresh cooked chicken breast fillets, chopped into cubes.


Instructions: 
In a large pot, heat the oil. Add chopped peppers, celery, onion, garlic and carrots and cook for about 15 minutes. Add the potatoes, clam juice, water and stir. 
Then add basil, oregano, pepper and parsley and bring to a quick boil. Lower temperature to medium and simmer the soup until the potatoes are beginning to soften. Add the cans of tomatoes and simmer for a further 30 minutes. 
Add the chicken for the last 3 minutes, or until heated through. . Adjust seasoning to taste

Let the soup stand for a little while, then serve with crusty French bread.

My Spaghetti

What do you do with a dozen Roma tomatoes that disparately need to used? Make spaghetti. All part of  the proper care and feeding of my curmudgeon.

I chopped about a dozen tomatoes and put them in a sauce pan with a little salted water. They boiled about an hour. Poured back in the pan added 4 beef bouillon cubes, a little more salt, minced onion,  and tomato paste and balsamic vinegar. Blended it till smooth in myVita mix, and then poured back into the pan
I cooked it for anther 45 minutes, added Italian seasoning. 
In a large skillet browned a pound of ground beef, celery, onion and green pepper. salt pepper and Italian seasoning. 
Next put pasta on to boil. cook to package instructions, drain, add pack to pot with butter parley and basil. mix well. 
Add sauce to ground beef, pour over pasta and serve  yum. The curmudgeon said it was so disgusting that I could torture him again with in any time. ha ha
. 






For the sauce:
12 Roma tomatoes
3 tablespoons dried minced onion
1 tablespoon garlic powder
1 tablespoon balsamic vinegar
1 tablespoon salt
1 teaspoon ground pepper
1 tablespoon olive oil

    

Ground beef mixture

1 lbs ground beef
1/2 green bell pepper
1/2 small onion
1/2 cup chopped celery
3 cloves garlic
1 tablespoon Italian seasoning
2 teaspoons balsamic
2 teaspoons Worcestershire sauce
salt and pepper to taste

For the pasta

1 lbs spaghetti
3 tablespoons butter
1 tablespoon dried basil
1 tablespoons parsley

Pork Cacciatore



The original recipe comes from Weight Watchers. This is my version. I took out the rosemary and changed from yellow to green pepper. I also cut back on the water, and I used the liquid from the canned mushrooms.  So, this sauce is a little thicker. Over all delicious.


Ingredients


12 oz uncooked lean pork tenderloin, cut into 1- to 1 1/2-in chunks
1/2 tsp table salt, divided
1/2 tsp black pepper, freshly ground, divided
3 spray(s) cooking spray, divided
3 small uncooked  potato(es), peeled, cut into 1-in chunks
1 medium uncooked onion(s), halved and thinly sliced
1/2 cup(s) water, or more if necessary, divided
1 medium green pepper(s), cut into 1-in chunks
8 oz mushroom(s), halved or quartered lengthwise (about 3 cups)
1 cup(s) home made marinara sauce



Instructions

Coat a large nonstick skillet with cooking spray; heat over medium heat.

Sprinkle pork with 1/4 teaspoon each salt and pepper. Add pork to skillet, increase heat to medium-high and cook, turning pieces occasionally, until browned, about 6 minutes; remove to a plate.

Off heat, coat same skillet with cooking spray; heat over medium heat. Add potatoes, onion and 1/2 cup of water; cook, scraping bottom of pan, 1 minute. Cover and cook, stirring occasionally, 5 minutes.

Add green pepper, mushrooms,  and remaining 1/4 teaspoon each salt and pepper to skillet; saute over medium-high heat, until vegetables are lightly browned, adding a tablespoon or two of water if needed to prevent sticking, about 7 minutes.



Stir in marinara sauce, pork; bring to a simmer. Cover skillet, reduce heat to medium and cook until vegetables are tender and pork is cooked through, about 7 minutes. Yields about 1 1/2 cups per serving.

7-layer dip

Planning a Super Bowl party? Make dip. this is simple, but really good.




ingredients
3 avocados
12 oz (340 g) drained pitted black olives, halved
juice of 1 lime or lemon
8 tomatoes, chopped
1 lb (450 g) canned refried beans
1/2 red onion, chopped
17 fl oz (500 ml) soured cream.
1 lb 10 oz (750 g) Cheddar or Monterey Jack cheese, coarsely grated
1/4 tsp chilli powder
chopped fresh coriander and spring onions to garnish
2 green peppers, deseeded and finely chopped

Prep: 20 min Total:

Peel and mash the avocados with the lime juice, using a fork.

To assemble, layer the refried beans over the base of a large glass dish. Add the mashed avocados and then the soured cream and sprinkle the chilli powder on top.

For the green pepper layer, sprinkle the chopped pepper around the perimeter of the dish first, to ensure that the layer is visible, and sprinkle the rest evenly over the center. Layer the halved olives carefully on top and spoon over the chopped tomatoes and red onion. Finally, add the cheese and the coriander and spring onion garnish. Chill until ready to serve.
