Peanut butter corn flake cookies



Here's a great no-bake recipe. They are fun to make too.

    • 1 ½ cups sugar
    • 1 ½ cup dark corn syrup
    • 2 cups peanut butter
    • 6 cups corn flakes



Combine sugar and corn syrup in a npan cook stirring consistently until boiling slightly. Remove from heat and add the peanut butter. Pour of corn flakes. Stir well. Put in pan to cut, or roll into balls. 

These are even better cold.

Red Beans and Rice



In the summer, I hardly ever use my oven. If I can't cook it in a crock pot of micro wave, I don't cook it. 


Crock-Pot red beans and rice


    • 6 can red beans
    • 6 green onions, chopped
    • 2 stalks of celery, chopped
    • ½ green pepper, chopped
    • 1 to 2 cups ham scraps
    • 1 teaspoon garlic powder
    • 1 teaspoon cayenne pepper
    • 1 tablespoon seaming salt



Add all ingredients to a crock-pot and cook on low for 6 to 8 hours. Serve over white rice.

Cousin Peanut's Pink Stuff.

This recipe is fun.. I love that it's called Pink Stuff.  Great to take to a pot luck or picnic.








    • 1 can Eagle Brand Sweetened Condensed Milk
    • 1 can crushed pineapple
    • 1 can cherry pie filling
    • 1 small container of Cool Whip
    • 2 cups of mini marshmallows
    • 1 cup chopped pecans

Mix together and chill.

Enjoy.

Aunt Ruth's Snickerdoodles

The star of the this family recipe is Aunt Ruth. I my opinion  one of the most wonderful people to walk this planet. She was always so kind and loving. -- and such a good cook. You never left her house hungry

Snickerdoodles


    • 1/2 cup soft margarine
    • 1/2 cup softening
    • 1 1/2 cup sugar
    • 2 eggs
    • 2 3/4 flour
    • 2 tsp cream of tarter
    • 1/2 tsp salt
    • 1 tsp baking soda


For rolling:

  • 5 tablespoons sugar
  • 2 teaspoons cinnamon 


Preheat oven to 400.
Cream together sugar margarine and shortening beat in the eggs
Mix flour, cream of tarter, salt and soda
Slowly add to the flour mixture to the margarine   and egg mixture.

shape dough into balls. roll in the cinnamon and sugar.
Place on a cookie sheet 2 inches apart.
Bake 6 to 8 minutes or until set.
Should get about 6 dozen

Cousin Joyce's Six Flavor Cake

Here's a yummy entry in the  Adams Family Cookbook. This cake is so moist you don't need frosting. I think it's time to put some coffee on.  









Ingredients


    • 2 sticks of butter
    • 3 cups of sugar
    • 1/2 cup oil
    • 5 eggs
    • 3 cups flour
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1 cup milk
    • 1  tsp coconut extract
    • 1 tsp rum extract
    • 1 tsp lemon extract
    • 1 tsp butter extract
    • 1 tsp vanilla extract
    • 1 tsp almond extract

Directions

1. Cream butter, sugar  and oil until light and fluffy.
2  Add eggs.
3.  Sift dry ingredients together
4.  Alternately add creamed mixture  with milk.
5. Stir in all the extracts.
6. Pour into a tube pan and bake 1 1/2 hours at 325.
Serve and enjoy

Aunt Mea's Pie Crust

One of the most precious things that was left to me was my Grandmother's recipe book. At this time it is fading, so it is time to re-write it. 
  
This is first because everyone needs a good pie crust, and it is the one recipe I have that belonged to Aunt Mea.

Each year for the family picnic she brought gooseberry pie, which people inhaled. Every good pie needs a good crust. This one is very tender.

3 cups flour
1 tsp salt
1 1/4 cold shortening
1 tbs vinegar
1 egg
1/4 cup cold water

In a large bowl, combine flour and salt. Cut in shortening until it resembles coarse crumbs.
Mix egg, water and vinegar together. Pour into flour all at once and blend with a fork until dough forms a ball.
Wrap with plastic and chill in refrigerator.
