Best Ever Meatballs

Easy yummy meatballs.

1 pound lean ground beef
1 egg
1/3 cup bread crumbs
2 tablespoons Italian seasoning
1/4 cup Italian cheese
Salt
2 tablespoons onion minced
2 cloves garlic minced

Makes 18 meatballs

Put all the ingredients in one bowl. Mix well. Pinch small amounts of the meat mixture form into a ball and add to a greased baking dish. Bake at 275 for 25 minutes until browned and cook through.

These are now ready for your favorite sauce. Enjoy

Hungarian Meatball Stew

Ingredients




1 1/2 pounds ground beef
1/2 cup bread crumbs
1 large egg
Salt and pepper
2 tablespoons extra-virgin olive oil
2 carrots, chopped
1 small onion, chopped
1 rib celery, chopped
2 tablespoons flour
2 tablespoons sweet paprika
2 cups beef broth
1 tablespoon caraway seeds


1. In a large bowl, combine the beef, bread crumbs, egg, 1 teaspoon salt and 1/4 teaspoon pepper. Mix well and form into 1 1/2-inch meatballs.

2. In a large skillet, heat the olive oil over medium-high heat. Working in 2 batches, add the meatballs and cook, shaking the skillet often, until lightly browned, 5 to 7 minutes. Transfer to paper towels to drain.

3. Pour off all but 1 tablespoon of the fat in the skillet and add the carrots, onion and celery. Cook, stirring constantly, until softened, about 3 minutes. Stir in the flour and paprika and cook for 1 minute. Pour in the beef broth and bring to a boil over high heat, scraping up any browned bits from the bottom of the pan; season to taste with salt and pepper. Add the reserved meatballs and caraway seeds, reduce the heat to medium-low and simmer for 5 minutes.

Meatball Stew

Meatball Stew


Servings: 4


Ingredients

12 ounces frozen fully-cooked beef meatballs (about 23 meatballs)
1 jar (12 ounces) beef gravy
1 can (8 ounces) stewed tomatoes, undrained
3/4 teaspoon dried thyme
1/8 teaspoon pepper
1 package (16 ounces) frozen vegetable mixture (with potato)


Directions

Combine gravy, tomatoes, 3/4 cup water, thyme and pepper in large saucepan; bring to a boil. Stir in meatballs and vegetable mixture; reduce heat. Cook 10 to 15 minutes or until meatballs are heated through, stirring occasionally.

Orzo and Meatballs


Everybody loves pasta.
today's recipe is includes "Orzo". it is a rice shaped pasta, and is quite versitle. It can be used in soups and stews, or can be the main dish like todays feature.
Orzo and Meatball salad.

Start by cooking 1/2 a box of orzo pasta
chop 1/2 a cup of celery
1/2 cup of bell peppers, mix the colors, red, green and yellow
1 cup of cherry tomatoes, cut in half
3 oz of chicken breast

to the cooked pasta add the veggies, chicken, peas, and about 16 cooked meatballs, about 1 1/2 in diameter.

For the dressing,
1/2 cup mayo
3 Tbls of grain mustard
1/2 cup ranch dressing
1/4 cup marinara sauce
(for a spicy kick substitute barbque sauce for the marainara.


toss together cover and refrigerate. this makes a lot, so why not take it to your next bar-b-que or pot luck.
