Our soup of the day is cold

What can you do with 1 1/2 lbs of chicken and those cans in your pantry? Make soup!

This soup is also good cold. which is nice when the weather is so hot.

2 Cups of chicken stock
1 1/2 lbs chicken-chopped
1/2 green bell pepper-chopped
1/2 red onion-chopped
1 can whole kernel corn
1 can pinto beans
1 can diced tomatoes
1/2 chipotle pepper chopped
1/2 cup green chili sauce
1 T chili power
1 T salt
2 T olive oil




Brown the chicken in a large skillet with the olive oil. add 1/2 t salt and the chili powder. In a crock pot add, broth, onion garlic, both peppers, tomatoes, corn, and beans.
Add chicken and simmer 8 hours. add the other 1/2 teaspoon of salt.

Cook rice acording to package directions.

serve with 1/4 cup of rice, and 1 cup of soup. add a dollup of sour cream if desired.

Don't Trifle with me

Trifle (TRI-fuhl) - The word "trifle" comes from the old French term "trufle," and literally means something whimsical or of little consequence. A proper English trifle is made with real egg custard poured over sponge cake soaked in fruit and sherry and topped with whipped cream.


It was in the mid-1700s England that cake (or biscuits), alcohol, and custard were combined in the trifle bowl. The recipe for trifle (and many of its now-heirloom glass dishes) came to America via the British who settled in the coastal South. Its popularity remained firm with Southern planters who loved indulgent desserts. Supposedly, it was called Tipsy Parson because it presumably lured many a Sunday-visiting preacher off the wagon. Southern hostesses prided themselves on their elegant table settings and considered a cut-glass trifle bowl to be mandatory.



I was in the mood for something sweet, something chocolate and creamy and maybe chewy. Well, hm put that all together, sweet creamy chewy, you get a trifle.

Anyway I just found a recipe in chocolate. Oh, my favorite.





Ingredients





1 (19.8 ounce) package brownie mix

1 (3.9 ounce) package instant chocolate pudding mix

1/2 cup water

1 (14 ounce) can sweetened condensed milk

1 (8 ounce) container frozen whipped topping, thawed

1 (12 ounce) container frozen whipped topping, thawed

1 (1.5 ounce) bar chocolate candy



Directions



1. Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares.



2. In a large bowl, combine pudding mix, water and sweetened condensed milk. Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.



3. In a trifle bowl or glass serving dish, place half of the brownies, half of the pudding mixture and half of the 12 ounce container of whipped topping. Repeat layers. Shave chocolate onto top layer for garnish.



Refrigerate 8 hours before serving.

Another Yummy Raw Summer Recipe

Here is another yummy recipe from "Let's have a Raw Summer". 

 Cucumbers are great. They are low in calories. There are a variety of them. Cucumbers are grown everywhere. My favorite came out of my Grandmothers backyard.

Here are just a few health benefits of our friends the cucumber:

•Daily consumption of cucumber juice helps control cases of eczema, arthritis and gout.


•Cucumber has been found to be beneficial for those suffering from lung, stomach and chest problems.

•The potassium in cucumber makes it useful for the problem of high and low blood pressure.

•Cucumber contains Erepsin, the enzyme that helps in protein digestion.

•Cucumber juice is said to promote hair growth, especially when it is added to the juice of carrot, lettuce and spinach.

•Cucumber juice, when mixed with carrot juice, is said to be good for rheumatic conditions caused by excessive uric acid in the body.

•Cucumber can prove to be beneficial for those suffering from diseases of the teeth and gums, especially in cases of pyorrhea.

•Being rich in minerals, cucumber helps prevent splitting of nails of the fingers and toes.

•Cucumber has been associated with healing properties in relation to diseases of the kidney, urinary bladder, liver and pancreas.

So here is another recipie from Vita mix for a yummy cucumber soup.


Start with:
1/2 cup (120 g) plain or vanilla yogurt or nonfat sour cream
1 cup (133 g) English cucumber, washed and chopped
1 heaping tablespoon chopped onion
1/2 cup (120 ml) ice cubes
salt and pepper, to taste




1. Place all ingredients into the Vitamix container in the order listed and secure lid.
2. Select Variable 1.
3. Turn machine on and quickly increase to Variable 10, then to High.
4. Blend for 1-1 1/2 minutes or until smooth.

Oh, Peaches...

What do you like most about the weekends? Is it a chance to get things done that didn't during the work week? or is time to relax, catch up on sleep or is it diving into that novel that's been sitting on the night table?

Well here's a quick smoothie to get you going no matter what the day brings. Use fresh fruit if it is season, if not frozen will work. I add a bit of yogurt for some protein and extra creaminess.

Remember protein and fiber will help you feel fuller longer if your dieting; and everybody needs some everyday.

Put these in the blender in the order listed.

3/4 cup (112 g) frozen unsweetened peach slices
1 orange, peeled, quartered
1/4 C Greek style yogurt.
1 teaspoon honey or other sweetener, to taste
1/4 cup (60 ml) water
1 cup (240 ml) ice cubes

Run at high speed in the Vita Mix for about a minute. 
pour into a tall glass and enjoy.

Let's have a raw summer

Picture this:  It is a typical July day, it's hot and you're hungry and starting to get a little cramky. You start thinking about what you want to eat. Do you really want to drag out a pot or pan and turn on the stove, just to make yourself and your kitchen that much hotter? Oh, golly, yuck no! So you get crankier. You think, should I then go out and get something.... Go outside, get in a hot car... and drive around town wondering what will satisfy your food cravings. hmm. golly yuck nooo.

How about this a nice cooling refreshing smoothie... yeah yeah.... made with  strawberries, and watermelon. hmm? 

OK. very simple quick nutritious and delish.

Ingredients:
2 C watermelon chucks. seeded
1 C hulled strawberries
2 C ice
1 T honey

put all ingredients in the blender in the order listed. Start on low and then turn to high.
Run for 1 minute
if it gets too thick add a splash of juice.
makes enough for 2 servings.
