Pork Chops with Asparagus and Lemon Sauce


Spring! Time for young asparagus. yum...

    • 1 pound of boneless pork chops
    • 1 cup chicken broth
    • 1/4 cup lemon juice
    • 2 tablespoons cornstarch
    • 2 teaspoons minced onion
    • 1 teaspoon garlic salt
    • 1 teaspoon sea salt
    • 1 teaspoon ground pepper
    • 1 pound of fresh asparagus
    • 3 tablespoons of butter


brown pork and set aside. steam asparagus in chicken broth. after the asparagus has cooked to crisp tender, about 15 minutes, add the chicken broth to the pan that the pork cooked in. don't pour out any of the pan juices.

stir in the butter, lemon juice, onion and garlic. when the butter is melted and the mixture is simmering, whisk in the cornstarch. whisk until smooth

add back the port and asparagus. salt and pepper to taste.

serve with boiled potatoes or steamed rice.

That Beef and Rice Thing

More dinner goodies.

1 1/2 pounds stew meat
1/2 an onion diced 
1/2 cup bell pepper diced 
2 teaspoons minced garlic
1 cup sliced mushrooms 
1 tablespoon steak sauce 
1/2 tablespoon worchestershire sauce
2 tablespoons apple cider vinegar 

Cook the veggies except the mushrooms over medium heat about 5 minutes, or until they start to glisten. 
Add the stew meat. Sauté until browned. 
Reduce the heat and simmer about 20 minutes. Add the sauces and the mushrooms. Salt and pepper to taste. 
Add gluten free gravy mix, and some water if necessary. 
Simmer another 15 minutes. 
Serve over hot rice, or a gluten free pasta.

Chinese Style Stuffed Peppers

1 pound ground turkey
3 cups cooked rice
3 tablesppoons soy sauce
4 tablespoons teriyaki sauce
12 diced onion
1 teaspoon diced garlic
11/2 cup diced Chinese vegetables
4 large bell peppers.
2 teaspoons Thai style chili sauce
Brown turkey burger, crubling as it cooks, add veggies, onion and garlic, soy sauce and teriyaki sauce cook until the meat is browned and the veggies are tender. Add the cooked rice mix well. Set aside to cool
Cut the very top off the peppers  carefully remove the core. Scrape out the white membrane. Fill the peppers with the mix rice mixture.
Top each pepper with an additional tablespoon of teriyaki sauce.
Bake at 350 for about 45 minutes, or until the peppers are tender.

Black Beans and Rice


Meatless Monday


This recipe is quick and easy. It’s perfect for a work night dinner. Black Beans and Rice.


2 cans of black beans
3 small tomatoes, diced
½ diced onion
½ diced green bell pepper
2/3 cup vegetable broth
2 tsp cumin
1 tsp chili powder
Salt and pepper to taste

Sauté the onion and pepper in a little olive oil until soft. Add the beans, tomatoes, and seasonings. Bring to a boil and add the broth. Let it simmer for 5 minutes.

Serve over hot rice.

Broccoli Chicken and Rice

Chicken Broccoli and Rice. This is one version. I got this recipe from a friend. She doesn't use the paprika or celery, and she serves the brocolli on the side. There is probably a few other changes, but.. 

  

1/2 lbs chicken, cubed
1/2 cup celery, chopped
1 cup broccoli florets
1/2 Tbl onion powder
1/2 tbl garlic powder
1 tbl paprika
1 can fat free cream of chicken soup
1 cup light sour cream
2 bullion cubes
1/4 hot water
3 cups cooked rice
salt and pepper
2 Tablespoons olive oil



Add 2 tablespoons of olive oil to a large skillet. Add cubed chicken, selery, brocolli and salt and pepper. Saute for 10 mins.

  Mircowave 1/4 cup of water for 1 minute. add the bulion cubes and let disolve. Add the broth to the chicken.   Stir in the sour cream and and soup. Mix well and contunue simmering for another 10 minutes.   Serve over hot rice.

Salsa Chicken and Rice

You are just home from work, and you are tired and hungry. The last thing you want to hear is
'hon, what's for dinner?' Ugh.
Here is a quick week night dinner.


Salsa Chicken and Rice


Ingredients
  • 1 pound chicken breast
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 1/2 large onion
  • 1/2 cup chicken broth
  • 1 1/2 cup salsa
  • 4 teaspoons olive oil
  • 1/2 tablespoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • dash salt and pepper
Cooking Directions
  1. Heat oil in a large skillet. Add chicken breast. Ccook over medium heat. Add salt pepper, cumin, and chili pepper. Cook about 15 minutes depending on the thickness of the pieces.
  2. When chicken is cooked, take off the heat. Add the peppers and onions to the hot pan. Saute the vegetables until soft. about 5 to 7 minutes
  3. Cut the chicken into bite sized pieces.
  4. Add back to the pan add broth and salsa. Simmer another5 minutes. Serve over hot rice. add a dollop of sour cream if desired.

Chicken & Broccoli

From: Campbell's Community: (with a twist)
Prep: 10 minutes
Cook: 30 minutes
Serves: 4
This creamy chicken dish, with just the right amount of broccoli, cooks in the skillet in just 40 minutes!


Ingredients:

Vegetable cooking spray
1 1/4 pounds skinless, boneless chicken breast halves, cut into 1-inch pieces
2 cans (10 3/4 ounces each) Campbell's® Condensed Cream of Chicken Soup
1/2 cup sour cream
1/4 cup diced onion
1/4 cup diced celery
1 package (16 ounces) frozen broccoli cuts, thawed

Directions:

Spray a 10-inch skillet with the cooking spray.  Add the chicken and cook until well browned and cooked through, stirring occasionally.

Stir the soup, sour cream, and broccoli in the skillet.  Reduce the heat to low.  Cook for 15 minutes, stirring occasionally.


Recipe Tips:


Serving Suggestion:  This recipe is delicious served over hot cooked rice.

Dirty Rice

Traditional dirty rice is made with ground organ meats, but I'm not a fan. So i substitute ground beef. I also don't like it as spicy, so I use more bell pepper, and less hot pepper.. Ingredients


1 1/2 cup long-grain rice (Carolina, basmati, jasmine, etc)
2 cups chicken broth
2 cups water
3 Tbsp vegetable oil
1/2 pound ground pork
1/2 pound ground beef
3 slices of bacon, chopped
1/2 onion, chopped
2 celery stalks, chopped
1/2 green bell pepper or 1-3 jalapenos, seeded and chopped
1 Tbsp Cajun seasoning
2 green onions, chopped

Method

1 Cook the rice according to the package instructions, but use chicken broth for one third of the cooking liquid. So, for example, if the package says to use 3 cups of water for 1 1/2 cups of rice, use 2 cups of water and 1 cup of chicken broth. Once the rice has finished cooking, remove from heat and let sit for 5 minutes. Turn the rice out onto a sheet pan and drizzle 1 tablespoon of olive oil over it. Mix to combine and let cool.

2 While the rice is cooking,  get a large pan that can eventually hold the rice plus everything else, put 1 tablespoon of oil plus the bacon in and cook over medium-low heat until the bacon is crispy.

3 Add the ground pork and ground beef and increase the heat to high. Allow the meat to brown before stirring. As soon as the meat starts to brown, add the final tablespoon of oil and add the celery, peppers, and onions. Brown them all over medium-high heat. You may notice the bottom of the pan getting crusty. Keep it from burning by lowering the heat if needed. 


4 Add the remaining cup of chicken broth and deglaze the pan by scraping the bottom of the pan with a wooden spoon. Add the Cajun seasoning and turn the heat to high. Boil away most of the chicken stock and then add the cooked rice. Toss to combine.

5 Turn off the heat and add the green onions. Toss once more to combine and serve hot.



Yield: Serves 4.

Red Beans and Rice

ingredients

1 pound dried red kidney beans, picked over
1 pound smoked link sausage, halved lengthwise and cut crosswise into 1/4-inch-thick slices
1 large onion, chopped
2 pale-green inner celery ribs (with leaves), chopped
4 garlic cloves, minced, or to taste
6 cups water
4 bay leaves
1 tablespoon dried thyme, crumbled
2 teaspoons dried oregano, crumbled
1 teaspoon Tabasco
3/4 teaspoon garlic powder
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon freshly ground white pepper, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
1/4 teaspoon cayenne, or to taste
2 teaspoons salt, or to taste

In a bowl soak beans in water to cover by 2 inches overnight. In a 6-quart heavy kettle combine all ingredients except 1/2 pound sausage. Bring mixture to a boil and simmer, covered, over moderate heat 1 1/2 hours. Remove lid and cook mixture at a bare simmer 1 hour more, adding more water if mixture is too thick.
Remove 1 cup bean mixture and mash to a paste. Stir bean paste and remaining 1/2 pound sausage into bean mixture and simmer 5 minutes. Serve bean mixture with rice.

Creamy Pork Chops

This is a quick week night dinner.

1 pound pork chops
1 can cream of mushroom soup
1/2 cup chicken broth
 1 can mixed veggies
 2 cups cooked rice
salt
pepper
1 tbs. balsamic vinegar
2 tbs. seasoning salt
2 tbs. olive oil
salt pepper

Heat a skillet on medium heat. add olive oil, and pork chops salt and pepper  to taste. Brown on both sides. 
Add soup, veggies and broth
put on low to simmer
In a medium sauce pan bring two cups of water to a boil. Add one cup of rice, the seasoning salt and the vinegar. cook to package instructions.
Serve pork chops and veggies over the rice.

Christmas Rice

This is a fun way to dress up rice. Serve it any time you need some color, not just the holidays.  At other times of the year, I just call it Festive Rice.

By the way, this really is a pinch of this and that... so bare with me...

2 cups of cooked rice. (white or brown)
1/3 cup dried cranberries.
1/4 cup chopped pecans
1/2 cup peas
2 Tbs of onion sauteed
2 Tbs, of green pepper
1/4 cup sliced mushrooms
a pinch of nutmeg, (tiny tiny amount)
a pinch of poultry seasoning
salt and pepper to taste.

cook the rice to package directions. saute the onions, mushrooms,  and peppers in a little butter for 5 minutes. toast the pecans, mix all ingredients together, and serve.

The heat of the rice and vegetables should plump the cranberries a little.

Our soup of the day is cold

What can you do with 1 1/2 lbs of chicken and those cans in your pantry? Make soup!

This soup is also good cold. which is nice when the weather is so hot.

2 Cups of chicken stock
1 1/2 lbs chicken-chopped
1/2 green bell pepper-chopped
1/2 red onion-chopped
1 can whole kernel corn
1 can pinto beans
1 can diced tomatoes
1/2 chipotle pepper chopped
1/2 cup green chili sauce
1 T chili power
1 T salt
2 T olive oil




Brown the chicken in a large skillet with the olive oil. add 1/2 t salt and the chili powder. In a crock pot add, broth, onion garlic, both peppers, tomatoes, corn, and beans.
Add chicken and simmer 8 hours. add the other 1/2 teaspoon of salt.

Cook rice acording to package directions.

serve with 1/4 cup of rice, and 1 cup of soup. add a dollup of sour cream if desired.

Rice Ole


Hi
I think it is time to take one direction and follow it. I admit I have been all over the place lately. It feels rather chaotic. I think the direction this is going to take is cooking.

I know, type cooking into any search engine and you will get thousands of hits. Well, cooking is one of first passions, My Mother, and Grandmother have let me "play" and create in the kitchen since the age of four. I remember in my Grammy's kitchen, I had my own work table and apron. Somewhere in the family albums is a picture of me being my "creative" self. So this is my tribute to her. If she were still live, Gram, it would probably embrace her. She was a very modest woman. And she knew how to make dishes "quick and tasty" on a budget.

So first up:

This was a favorite. All you need is one skillet. i am glad this recipe is still around.

Riceland Rice Ole'
Ingredients:
1/2 cup uncooked Riceland Extra Long Grain Rice
1 lb. ground beef
3/4 cup chopped onion
1 Tbsp. butter or meat drippings
2-1/4 cups water
1 beef bouillon cube
1/4 cup tomato paste
1-1/2 tsp. salt
1/8 tsp. pepper
1 tsp. chili powder
1/2 lb. Cheddar cheese, cubed

Preparation:
Brown meat and onions in butter, stirring to break meat apart. Stir in rice, water, bouillon cube and tomato paste; add seasonings. Heat to boiling; stir well and cover. Simmer 25 minutes. Add cheese cubes and toss lightly. Serve immediately. (From our "Riceland Rice Cookbook")

Serves 6

We just added a green salad, and some bread and had a great lunch. Yes, bread, it is southern thing, One always served bread with a meal.

I want to thank Riceland Rice for their recipes and ideas. Gram had a recipe booklet from them. She used it all the time.


Riceland is an Arkansas company. You can not get it where I live, but that would be competition, I live near the rice fields of California.
